15 Produce Packed Recipes to Make This Summer

Here’s a round up of seasonal recipe ideas to whip up this summer!

With Memorial Day taking place in just a couple of days, summertime is upon us! It’s been feeling pretty summery here in Connecticut, and it’s been nice to set up all of my backyard furniture, relax in my hammock, and get some Vitamin D and color on my face. My freckles are starting to peak out and I’m not mad about it at all.

My baby loves being outside just as my husband and I do, and with trails starting to open up around here, we’ve been taking advantage by going for weekend hikes as a family. I’ve definitely been thankful that this quarantine started in March when the weather was beginning to get nicer. It would be much worse to be cooped up at home while the weather was consistently cold and dreary.

Of course, the start of summertime means lots of awesome seasonal produce! From berries and peaches to tomatoes and corn, I can’t get enough of in-season fruits and veggies. I’m looking forward to the day that my local farmer’s markets open back up, and I can peruse the market with my babe picking up locally grown and made goodies.

In celebration of the unofficial start to summer with the upcoming holiday, today I’m featuring 15 seasonal recipe ideas. Let’s get to it!

Zoodles with basil cherry tomato sauce, pine nuts & lemon zest

Time to take advantage of peak zucchini season! This zoodle recipe features zucchini noodles in a saucy marinara. {gf with vegan option}

Strawberry oat banana bread

I don’t know about you guys, but I’m a year-round banana bread baker. This recipe takes a summery twist on banana bread with the inclusion of fresh strawberries. Featuring healthy swaps like oat flour instead of white flour, and apple sauce and coconut oil instead of butter, it’s also healthier than your typical banana bread.

Apricot almond oatmeal breakfast cookies

I’m starting to see apricots in grocery stores, and I’ve got to nab some soon to whip up these breakfast cookies. These cookies are a great recipe to whip up as a quick grab-and-go breakfast or snack throughout the week.

Grilled margherita & baby spinach portobello pizza

Talk about an easy, healthy meal for the grill! This recipe grills portobello mushrooms and stuffs them with marinara sauce, baby spinach, cherry tomato and mozzarella.

Creamy mango melon smoothie

Roasted tomato & spinach ricotta stuffed shells

I love using fresh, sweet tomatoes – especially during their peak summer season. This stuffed shells recipe puts a fun twist on classic stuffed shells by featuring roasted cherry tomatoes and a spinach goat cheese ricotta pesto. The recipe is also lighter on the dairy than typical stuffed shells dishes.

Avocado pistachio pesto & tomato crostini

Not only are tomatoes the sweetest in the summertime, but California avocados are at their peak during the warmest months as well. This crostini recipe uses avocado to make a spinach pistachio pesto, smears it on fresh bread, then tops it with slices of tomato, balsamic glaze & sea salt.

Baked strawberry donuts with strawberry cream cheese frosting

Satisfy your donut cravings by baking up a healthier homemade version. These babies use fresh strawberries, a base of oat + whole wheat flour, and a dairy free cream cheese frosting.

Kale salad with strawberries, goat cheese & almonds

This summery salad includes one of my favorite combos: strawberries + goat cheese + almonds. I like to massage the kale well with a simple lemon olive oil dressing to make it nice and tender.

Healthy cherry berry cobbler

If you love fresh berries, this recipe is for you. It’s a dairy free, lighter take on a summer cobbler that pairs wonderfully with vegan or regular ice cream, yogurt or whipped cream.

Arugula pesto linguine with tomato & zucchini

This recipe features a couple different fruits/veggies that are in peak season in the summer: arugula, zucchini and tomatoes. If you want to make it vegan, simply leave the grated cheese out or use a dairy free cheese or nutritional yeast.

Peach crumb cake

This vegan peach crumb cake uses ingredients like almond & whole wheat flours, coconut oil, flaxseed eggs, pistachios – and of course, a few fresh peaches.

Fair warning: This crumb cake is kind of addictive!

Peaches & cream muffins

Another yummy way to use those sweet summertime peaches? These peaches & cream muffins! {gf & can be made vegan with dairy free yogurt}

Goat cheese stuffed zucchini blossom crostini

If you’re lucky enough to nab zucchini flowers this summer, one fun recipe to use them for is this goat cheese stuffed zucchini blossom crostini. I love making crostini appetizers!

Blueberry chia oatmeal bars

These oatmeal bars combine fresh blueberries with rolled oats, banana, peanut butter, chia seeds, and brown rice syrup. Great for a healthy breakfast or snack!

La Jolla is an ever popular area, but for good reason… It’s one of the most beautiful areas in San Diego ☀️ & my favorite time of year to visit is NOW when it’s Harbor Seals Pupping Season! 🦭

📍Casa Beach is closed off from humans from mid-December through mid-May for birthing & bonding, and most of the seal pups are born in February & March. They are so much fun to watch!

Last weekend we got to ride on the world’s largest rotating aerial tram car, the Palm Springs Aerial Tramway 🌴⛰️ Guests travel 6,000 feet up in just 10 minutes! 

Once we reached the top, we hiked a couple miles of trails in Mount San Jacinto State Park - where it was only 37 degrees and windy, brr! - and took in the beautiful views. 

Here are a few tips for optimizing a Palm Springs Aerial Tramway adventure: 

✨Show up early. We didn’t realize how big of a production this excursion would be, and when we arrived at 11 am, the wait time was 2 hours to ride the tramway. If I could do it over, I would show up at opening time. 

✨Bring breakfast. While they do have food options while you wait for your tram ride, it’s stereotypical not very healthy American food. Pick up food at a local cafe and bring it with you to enjoy outside. We love @palmgreenscafe!

✨ Bring extra clothes. The temperature at 8,500 ft elevation varies from 20-40 degrees colder, so make sure to pack a jacket, sweatshirt, hat, even gloves.

Who else is pumped for the Olympics to start?! 🇺🇸

This curling competition experiment is a hit with my kiddo! Here’s how to make it: 

You’ll need: 
✨A rimmed baking sheet
✨Aluminum foil 
✨Permanent markers (we used black + red) 
✨A variety of pebbles 
✨Optional: buttons, craft pom-poms and other objects to experiment playing with 

1️⃣ Spread foil across your baking sheet. Draw the starting line on 1 side and a small circle inside a large circle on the other side. 

2️⃣ Place your “rink” in the freezer, then fill it with water halfway up the sides. Chill until it’s totally frozen. 

3️⃣ Time to play! Each player picks 3 pebbles. Take turns using a finger to push your pebble towards the target. 

🥌 Pebbles that land in the inner circle = 3 points each 
🥌 Pebbles that land in the outer circle = 1 point each
🥌 3 rounds = 1 game 

❗️Players can hit other pebbles & knock them out of the circles, which is fun! 

❗️Once all players use their pebbles, that’s the end of round 1. Tally the scores as you go!

Welcome to my new series, Easy Plant-Based Meals, where I share simple, nutritious meals that I make for my family on the regular. 🥦🥕🥬🧅🧄🫘🫑
 
Today I’m making Garlic Pearled Couscous with Roasted Chickpeas & Veggies. 

Here are the ingredients you need to serve 4: 

1️⃣ 2-3 boxes of Near East Pearled Couscous with Roasted Garlic & Olive Oil (I find that 3 boxes yield about 4.5 cups; you can also use a plain pearled couscous)
2️⃣ 1 can garbanzo beans 
3️⃣ 4 TSP avocado oil 
4️⃣ 1 zucchini 
5️⃣ 1 bell pepper
6️⃣ 2T-1/4 cup pine nuts, optional but I like the added heart-healthy crunch
7️⃣ Salt, pepper & paprika to taste 

Directions:
1️⃣ Preheat oven to 375. Drain & rinse chickpeas, then add to a baking dish. Add 2 TSP of avocado oil, and a nice sprinkle of salt, pepper, and paprika to taste. Mix it up, then cook for 25 minutes, stirring halfway through. 

2️⃣ Cook the couscous according to the box directions. 

3️⃣ Heat 2 tsp avocado oil in a sauté pan over medium-low heat. Chop the zucchini and bell pepper, add a sprinkle of salt & pepper, then cook until tender. 

4️⃣ Lightly toast the pine nuts. 

5️⃣ Plate the couscous, add the roasted chickpeas & veggies on top, & sprinkles pine nuts onto each plate. Enjoy!

🌎 The largest National Park in the contiguous U.S. - 3.4 million acres! - did not disappoint 🔥 Here’s what we had on our agenda for Day 2️⃣ of exploring Death Valley National Park: 

📍Explore the Mesquite Flat Sand Dunes
🛷Go sledding down the dunes! 
🥾Hike Mosaic Canyon Trail ~ a 3.5-mile out & back trail with 974 ft elevation gain. This trail was so much fun & the rock formations are gorgeous! My daughter loved climbing & bouldering around. It features some cool slot canyons and difficult rock scrambling - our kinda speed! 
🚰 Refuel at Stovepipe Wells Village ~ Nearby pitstop within the park for gas, restrooms, a general store & restaurants
