Fall is upon us…
…and I’m all about it as I sit drinking pumpkin chai tea in a pumpkin mug! While it’s still summery here in Southern California, we’re seeing hints of cooler air in the mornings and evenings. Football season is in full swing. I’ve got a lot of autumn plans coming up, including a Halloween bash at Disneyland and apple picking at this adorable country town nearby called Julian. And I’m definitely starting to get bitten by the fall baking bug!

Speaking of baking, today’s healthy apple muffins are a great way to get into the autumn spirit. Because what says September more than apples?!

Healthy Banana Bread Apple Muffins
Every week, I whip up one or two healthy recipes that serve as on-the-go breakfasts or snacks for the whole household + something homemade as part of my daughter’s school lunch. I came up with these healthy apple muffins as a way to enjoy peak apple season! They’re a delicious snack that you can feel good about nourishing your body with.

We start with a hearty base of oat + whole wheat flours. The recipe calls for three mashed bananas, which you want to make sure are ripe, along with two apples of your choice that bake well (I use Granny Smith here). And then, we add moisture to the recipe with avocado oil, apple sauce and an apple cider vinegar/almond milk mixture.
These healthy apple muffins are sweetened with honey – or maple syrup, if you prefer.

I can’t resist eating a few warm right out of the oven. After that, my favorite thing to do is pop em in the toaster for a few before enjoying. For my daughter’s school lunch, I cut the muffins into pieces and pack them with a spoon for easy eating.

Healthy Banana Bread Apple Muffins {dairy free}
Made with oats, fresh fruit, and honey, these healthy apple muffins are a great snack that are perfect to enjoy when apples are in peak season!Ingredients
- 1/4 cup almond milk
- 1 TSP apple cider vinegar
- 1 cup oat flour (can also take a cup of rolled oats and pulse in a food processor until mostly ground)
- 1 cup whole wheat flour
- 1 TSP cinnamon
- 1 TSP baking powder
- 1/2 TSP baking soda
- 1/2 TSP salt
- 3 medium ripe bananas
- 1/2 cup unsweetened apple sauce
- 1/2 cup honey
- 1/4 cup avocado oil
- 2 TSP vanilla extract
- 2 medium apples that bake well, such as Granny Smith
Instructions
- Preheat oven to 350 degrees.
- Combine the almond milk and apple cider vinegar in a small bowl. Briefly stir and set aside.
- Combine the oat flour, whole wheat flour, cinnamon, baking powder, baking soda and salt.
- Mash the bananas and place in another mixing bowl. Add in milk/vinegar mixture, along with the apple sauce, avocado oil, honey and vanilla.
- Combine the wet and dry ingredients, stirring just until combined.
- Peel and chop the apples, then toss them into the bowl.
- Line your 12-cup muffin tin with muffin cups, or alternatively, spray the tin with cooking spray, then fill each cup up with the batter.
- Bake for 19-24 minutes, or until they pass the toothpick test.
- Allow the muffins to slightly cool before removing from the muffin tin. Enjoy! Store the muffins in an airtight container in the fridge.
