Healthy Banana Bread Apple Muffins {dairy free}
Made with oats, fresh fruit, and honey, these healthy apple muffins are a great snack that are perfect to enjoy when apples are in peak season!

- 1/4 cup almond milk
- 1 TSP apple cider vinegar
- 1 cup oat flour (can also take a cup of rolled oats and pulse in a food processor until mostly ground)
- 1 cup whole wheat flour
- 1 TSP cinnamon
- 1 TSP baking powder
- 1/2 TSP baking soda
- 1/2 TSP salt
- 3 medium ripe bananas
- 1/2 cup unsweetened apple sauce
- 1/2 cup honey
- 1/4 cup avocado oil
- 2 TSP vanilla extract
- 2 medium apples that bake well, such as Granny Smith
Preheat oven to 350 degrees.
Combine the almond milk and apple cider vinegar in a small bowl. Briefly stir and set aside.
Combine the oat flour, whole wheat flour, cinnamon, baking powder, baking soda and salt.
Mash the bananas and place in another mixing bowl. Add in milk/vinegar mixture, along with the apple sauce, avocado oil, honey and vanilla.
Combine the wet and dry ingredients, stirring just until combined.
Peel and chop the apples, then toss them into the bowl.
Line your 12-cup muffin tin with muffin cups, or alternatively, spray the tin with cooking spray, then fill each cup up with the batter.
Bake for 19-24 minutes, or until they pass the toothpick test.
Allow the muffins to slightly cool before removing from the muffin tin. Enjoy! Store the muffins in an airtight container in the fridge.
