Healthy Banana Bread Apple Muffins {dairy free}

Made with oats, fresh fruit, and honey, these healthy apple muffins are a great snack that are perfect to enjoy when apples are in peak season!

Ingredients
  

  • 1/4 cup almond milk
  • 1 TSP apple cider vinegar
  • 1 cup oat flour (can also take a cup of rolled oats and pulse in a food processor until mostly ground)
  • 1 cup whole wheat flour
  • 1 TSP cinnamon
  • 1 TSP baking powder
  • 1/2 TSP baking soda
  • 1/2 TSP salt
  • 3 medium ripe bananas
  • 1/2 cup unsweetened apple sauce
  • 1/2 cup honey
  • 1/4 cup avocado oil
  • 2 TSP vanilla extract
  • 2 medium apples that bake well, such as Granny Smith

Instructions
 

  • Preheat oven to 350 degrees.
  • Combine the almond milk and apple cider vinegar in a small bowl. Briefly stir and set aside.
  • Combine the oat flour, whole wheat flour, cinnamon, baking powder, baking soda and salt.
  • Mash the bananas and place in another mixing bowl. Add in milk/vinegar mixture, along with the apple sauce, avocado oil, honey and vanilla.
  • Combine the wet and dry ingredients, stirring just until combined.
  • Peel and chop the apples, then toss them into the bowl.
  • Line your 12-cup muffin tin with muffin cups, or alternatively, spray the tin with cooking spray, then fill each cup up with the batter.
  • Bake for 19-24 minutes, or until they pass the toothpick test.
  • Allow the muffins to slightly cool before removing from the muffin tin. Enjoy! Store the muffins in an airtight container in the fridge.
