Maple Blueberry Fontina Grilled Cheese

Hi there and Happy Friday! Let me start this Friday post off with something sweet…

banana split

So, I totally ate this for dinner last night! I’ve been doing a thing where I eat dessert for dinner about one night a week, and it’s working out great for me and my sweet tooth. 80/20 balanced eating baby!

The above deliciousness is scoops of Halo Top Creamery vanilla bean, strawberry, & chocolate flavors (despite me talking abut them twice this week, I’m not affiliated with them at all…. yet! I’d certainly like to be since I love them 🙂 ) with banana, caramel, a TJ’s brownie & oats bar and some chopped up Bark Thins dark chocolate pretzel with sea salt chunks. I went on a kick butt hike with my pup yesterday and just was not feeling any kind of typical dinner, so a dessert bowl for dinner it was…and it was fabulous!

Hiking at Elfin-7.23.15

Scenes from yesterday’s hot & sweaty hike

But let’s get to the real matter at hand today: grilled cheese.

maple blueberry grilled cheese

Pretty much anyone that eats cheese likes grilled cheese. I like to get a little creative with my grilled cheeses: Sometimes I put avocado, tomato & horseradish mustard with a cheddar grilled cheese, other times I put lightly fried zucchini in the sandwich. Today’s grilled cheese is kind of fancy, and a combo you probably don’t see very often:

Blueberry Grilled Cheese

Ever since I first made these pancakes with blueberry sauce, I’ve been thinking about other ways to cook blueberries and maple syrup into a sweet, sticky sauce because it is so.damn.good. The idea of melted cheese and buttery bread with gooey blueberries was intriguing to me and sounded like a fun, gourmet way to do grilled cheese, so I went for it…and you should too, because it’s delicious!

blueberry grilled cheese-2

Because blueberries in grilled cheese definitely falls under the category of a recipe that’s strange but good, today I’m linking up to Laura‘s weekly strange but good party (for the first time ever!).

Welcome to the #strangebutgood party!!! Love this odd grilled cheese… I’d inhale it! The sweet berry + salty cheese combo is one of my favorites on a cheese plate. Why not melted in a sandwich? Yum!

Well I’ve never heard of eating dessert for dinner before but I like it! That sundae looks like one epic way to do it too! 🙂

And this grilled cheese sounds unbelievable! Fontina melts so beautifully and I’m sure the sweet n’ salty combo is to-die-for!

Girrrrl, I don’t even eat cheese anymore and you have me salivating at this sandwich. It looks SO good, as does that dinner choice of sugar and heaven in a bowl.

WOW! First off, this looks amazing! What a fun recipe! I just love that you added blueberries!! How sweet! (literally!!) …and secondly, I love that you ate dessert for dinner and do it once in a while! While I don’t think I could ever skip dinner and opt for dessert, I find my balanced in little treats almost daily! Today I ate some delicious dark chocolate (Rainforest Mint flavored!) Gotta love that balanced lifestyle!! 🙂

I looked at that first picture and thought “wait a minute. That looks like a strange grilled cheese” lol. It all looks amazing though, I never would have thought to add blueberries to a grilled cheese sandwich.

We’ll be kicking off our week of family birthdays with my wonderful husband turning the big 4-0!

Something that intrigued me about Adam when I met him 20 years ago was that he seemed serious & quiet, but then would unexpectedly say something super witty or do something silly that cracked me up… & his serious-with-a-side-of-goofball personality remains true to this day (case in point: this video montage 😂)

After all, they say to marry the one who makes you laugh — and I, for one, highly recommend it❣️ Here’s to hoping the next 40 years are full of many more amazing adventures & accomplishments!

⭐️ Visiting the beautiful Blue Mosque
⭐️ Exploring the historic district and trying the street food (Why is the ice cream so.. sticky?!🍦)
⭐️ Venturing through the hectic Grand Bazaar
⭐️ A delicious dinner @amedroscafe
⭐️ Making friends with stray cats.. so many friendly cats! 🐈 As a huge animal lover, I adore that the city seems to take good care of its strays.. This is the first place I’ve ever been where they have vending machines to buy food for stray animals!

When I was newly pregnant with Camryn before we knew her gender, I had a vivid dream that I was picnicking with a little blonde girl in front of the Eiffel Tower. I woke up and told my husband, “Guess what? We’re having a girl!”

We got Camryn a passport at 5 months old with the idea that we’d visit Paris later that year and turn my literal dream into a reality. But then, COVID hit a few weeks later.

By the time we’d be comfortable traveling to Europe, we instead were selling our house in New England and traveling around the U.S. full-time.

We had adventures in plenty of other amazing places, but Paris remained a bucket list item.

…until now! Our picnic in Paris as a family of three may have happened a few years later than planned, but it was a bucket list item that was exactly how I’d pictured, perhaps even better.

It was such a magical evening staring at the Eiffel Tower, sipping champagne, and noshing on local food that we’d nabbed at shops around town ✨🥂

— all the while, laughing & soaking up the night with our wonderful little girl. 💗

Do you remember when you truly realized that the world is wide and you’ve only experienced a speck of it? 🌎

For me, it was the eye-opening opportunity of a college study abroad program in amazing Sicily. I fell in love with Italy, and the experience made me realize that I wanted to prioritize traveling and living in different places when I became a “real adult” (or in other words, when I graduated the following year).

Getting to return to the charming town of Taormina nearly two decades later with my family was a dream.

I returned to Sicily in a different phase of life: Older — I’ve almost doubled in age! Wiser. A mom. A wife.

Yet, still wide-eyed, always up for an adventure, and filled with wonder at the beauty of this world.

Different, but the same.

Taormina is still stunning, bustling with more tourists and more fame than I remembered thanks to things like “White Lotus” and Dolce & Gabbana fashion shows (one was happening while we were in town).

And so, I found Taormina herself to also be different, but the same — and definitely still a magical place ✨
