Red, White & Blue Pancakes [Vegan & Gluten Free]

Does anyone else feel like the month of June just flew by?!

I can’t believe that the 4th of July is already coming up at the end of this week! To celebrate Independence Day and get into a festive spirit, I came up with a red, white & blue recipe of one of my favorite meals… pancakes!

I haven’t posted a pancake recipe in awhile, and trust me when I tell you that this one is deeeelicious. I’ve seen red, white & blue pancake commercials around for chain restaurants lately, and had the itch to come up with my own homemade version that’s gluten free, vegan, healthy and light.

Being the fruit junky that I am, when I think of red and blue foods, I automatically think of strawberries and blueberries – especially since I had many local strawberries left to eat. For the white part of this recipe, I simply sprinkled shredded coconut on top of the flapjacks – since I have a thing for shredded coconut as of late.

And then there’s the best part: the blueberry sauce. Made with just fresh blueberries, maple syrup and a touch of cinnamon, I couldn’t stop tasting it because it was so yummy!

I usually make pancakes just for myself because my hubby prefers eggs for breakfast, but feel free to multiply the ingredient list to meet your household breakfast needs. I know for sure that this new recipe is now going to become a staple in my kitchen when I’m craving some awesome fruit-filled pancakes!

Red, White & Blue Pancakes

These festive blueberry pancakes are full of fruit and goodness, gluten free and vegan, and topped with strawberries, coconut, and a maple syrup blueberry sauce!

Calories 500 kcal

Ingredients
  

  • 1/2 cup dry old fashioned oats certified gluten free if necessary
  • 1/2 banana
  • 1/2 cup almond milk
  • 2/3 cup sliced strawberries
  • 2 TBSP shredded coconut
  • 2 TBSP pure maple syrup
  • 3/4 cup blueberries
  • 1 TBSP ground flaxseed meal
  • 1/4 TSP vanilla extract
  • 1-1 g packet of stevia sweetener
  • 1/2 TSP baking powder
  • 1/8 TSP cinnamon
  • Pinch of salt less than 1/8 TSP

Instructions
 

  • In a food processor or blender, combine the oats, banana, almond milk, flaxseed meal, vanilla extract, baking powder, stevia and pinch of salt. Pulse just until combined and mostly smooth.
  • Drop the batter onto a pancake griddle warmed over medium low heat, forming 2-4 pancakes depending on how large you like them. Drop 1/4 cup of the blueberries into the pancakes. Cook until the batter looks bubbly and thickened, then flip and cook on the other side.
  • Meanwhile, place the remaining 1/2 cup of blueberries, maple syrup, and cinnamon into a small saucepan over medium heat. Cook until it forms a thick sauce, stirring often.
  • Transfer the cooked pancakes onto a plate. Top with hot blueberry sauce, strawberry slices and shredded coconut. Enjoy immediately.

Tell me… What about you looking forward to in the month of July? 

I’ll be ending my July in Jersey at my parents’ house! I’m looking forward to enjoying life in San Diego for the next couple of weeks, then a fun trip to my home state for my best friend’s wedding festivities and to spend time with my family and girlfriends. We’ll also be celebrating both my hubby’s birthday (July 31st) and mine (August 6th) in California by ourselves this month before having birthday festivities in NJ with family, which I’m also excited for!

    Pancakes are always a great way to celebrate! I really never need a reason to whip up a batch, love the use of coconut and strawberries to make these blueberry pancakes super patriotic!! I may have pancakes for dinner one day this week!

    I am 100% making these this week!! I now always think of you when I crave pancakes and I recently even bought protein powder because I plan to replicate some of your pancake recipes 🙂

    I also love that every single ingredient in these red, white, and blues is currently in my kitchen.
    In July, I’m looking forward to hopefully hitting the beach, since we’ve had some chilly weather thus far!

    I can’t believe June is over either – this month went wayyyy too fast. Crazy! We don’t have a ton planned for July which is good … I feel like I need time to relax!

    These pancakes look delicious – especially that blueberry sauce! Yum! I feel like I would put that on everything…

Something that intrigued me about Adam when I met him 20 years ago was that he seemed serious & quiet, but then would unexpectedly say something super witty or do something silly that cracked me up… & his serious-with-a-side-of-goofball personality remains true to this day (case in point: this video montage 😂)

Our favorite parts: 
⭐️ Sultanahmet Square’s interesting historic sites, including the German Fountain & the Egyptian Obelisk 
⭐️ Visiting the beautiful Blue Mosque
⭐️ Exploring the historic district and trying the street food (Why is the ice cream so.. sticky?!🍦) 
⭐️ Venturing through the hectic Grand Bazaar 
⭐️ A delicious dinner @amedroscafe 
⭐️ Making friends with stray cats.. so many friendly cats! 🐈 As a huge animal lover, I adore that the city seems to take good care of its strays.. This is the first place I’ve ever been where they have vending machines to buy food for stray animals!

When I was newly pregnant with Camryn before we knew her gender, I had a vivid dream that I was picnicking with a little blonde girl in front of the Eiffel Tower. I woke up and told my husband, “Guess what? We’re having a girl!”

We got Camryn a passport at 5 months old with the idea that we’d visit Paris later that year and turn my literal dream into a reality. But then, COVID hit a few weeks later.

By the time we’d be comfortable traveling to Europe, we instead were selling our house in New England and traveling around the U.S. full-time.

We had adventures in plenty of other amazing places, but Paris remained a bucket list item.

…until now! Our picnic in Paris as a family of three may have happened a few years later than planned, but it was a bucket list item that was exactly how I’d pictured, perhaps even better.

It was such a magical evening staring at the Eiffel Tower, sipping champagne, and noshing on local food that we’d nabbed at shops around town ✨🥂

— all the while, laughing & soaking up the night with our wonderful little girl. 💗

When I was newly pregnant with Camryn before we knew her gender, I had a vivid dream that I was picnicking with a little blonde girl in front of the Eiffel Tower. I woke up and told my husband, “Guess what? We’re having a girl!”

We got Camryn a passport at 5 months old with the idea that we’d visit Paris later that year and turn my literal dream into a reality. But then, COVID hit a few weeks later.

By the time we’d be comfortable traveling to Europe, we instead were selling our house in New England and traveling around the U.S. full-time.

We had adventures in plenty of other amazing places, but Paris remained a bucket list item.

…until now! Our picnic in Paris as a family of three may have happened a few years later than planned, but it was a bucket list item that was exactly how I’d pictured, perhaps even better.

It was such a magical evening staring at the Eiffel Tower, sipping champagne, and noshing on local food that we’d nabbed at shops around town ✨🥂

— all the while, laughing & soaking up the night with our wonderful little girl. 💗

Do you remember when you truly realized that the world is wide and you’ve only experienced a speck of it? 🌎

For me, it was the eye-opening opportunity of a college study abroad program in amazing Sicily. I fell in love with Italy, and the experience made me realize that I wanted to prioritize traveling and living in different places when I became a “real adult” (or in other words, when I graduated the following year). 

Getting to return to the charming town of Taormina nearly two decades later with my family was a dream. 

I returned to Sicily in a different phase of life: Older — I’ve almost doubled in age! Wiser. A mom. A wife. 

Yet, still wide-eyed, always up for an adventure, and filled with wonder at the beauty of this world. 

Different, but the same. 

Taormina is still stunning, bustling with more tourists and more fame than I remembered thanks to things like “White Lotus” and Dolce & Gabbana fashion shows (one was happening while we were in town). 

And so, I found Taormina herself to also be different, but the same — and definitely still a magical place ✨
