Banana Oat Healthy Snack Cake Recipe

- 1 cup dry old fashioned oats
- 1 egg
- 1 ripe banana broken into a couple chunks
- 1/3 cup unsweetened apple sauce
- 1/4 cup cashew butter
- 1/4 cup honey or maple syrup
- 2 TBSP avocado oil
- 1/2 TSP baking soda
- Pinch salt
Topping Ideas
- Easy Frosting Drizzle Whisk 1/4 cup powdered sugar with 1.5 TSP of almond milk
- Yogurt & fresh fruit
- Mini chocolate chips
- Shredded coconut
In a food processor, process the oats until it forms a mostly ground flour.
Add in all of the remaining cake ingredients. Process until well combined and mostly smooth.
Pour into an 8" round, square or heart pan coated with cooking oil.
Bake at 350 degrees for 25-30 minutes, until it passes the toothpick test.
Allow the cake to cool before adding your choice of toppings.
