Blend banana, almond milk, flaxseed, cocoa, stevia, mint extract, oats, protein powder, baking powder and pinch of salt in a blender until mostly smooth.
Heat a large pan over medium heat. Coat with baking spray.
Spoon the pancake batter onto pan to make 3 pancakes. Place a few chocolate chips into each pancake, using about half of them. Cook until lightly browned on each side, then place on a plate.
Top pancakes with remaining chocolate chips and Arctic Zero ice cream. Eat immediately.
