Watermelon, Feta & Mint Salad

Ingredients
  

  • 1 large watermelon diced into chunks and chilled
  • 3/4 cup crumbled feta cheese
  • 1/4 red onion minced
  • 1/2 cup mint leaves coarsely chopped
  • 2 TBSP extra virgin olive oil
  • 1 TBSP red wine vinegar
  • Juice from 1/2 medium lemon
  • Sea salt to taste

Instructions
 

  • Place the watermelon chunks in a large salad bowl. Add the feta, red onion and mint leaves.
  • In a small bowl, whisk olive oil, red wine vinegar, and lemon juice together. Drizzle over top watermelon. Sprinkle sea salt to taste. Gently toss to evenly combine.
