Banana Almond Butter Muffins {Vegan & Gluten Free}

Ingredients
  

  • 2 cups old fashioned oats insure you're using certified gluten free oats if necessary
  • 2 large brown bananas mashed
  • 1/4 cup almond butter
  • 3/4 cup almond milk
  • 1/2 cup light brown sugar or coconut sugar
  • 1 1/2 TSP cinnamon
  • 1 TSP vanilla extract
  • 1/2 TSP salt
  • 1 TSP baking powder

Instructions
 

  • Preheat oven to 350 degrees. Line a muffin tin with 12 muffin cups.
  • Place old fashioned oats in a food processor, and pulse until fine.
  • Place oats in a medium bowl, then add in cinnamon, salt and baking powder. Stir to combine.
  • In another bowl, place mashed banana, almond butter, brown sugar, almond milk and vanilla. Use an electric mixer to combine well.
  • Add dry mixture into wet, and beat just until combined.
  • Spoon evenly into muffin cups.
  • Bake for 15-20 minutes, or until a toothpick comes out clean (Mine baked in 17 minutes).
  • Cool slightly on a wire rack, then enjoy!
