Healthy Strawberry Oat Banana Bread {vegan + gluten free}

Ingredients
  

  • 2 cups dry oats or oat flour
  • 3-4 ripe bananas mashed, depending on how banana-y you like your banana bread (I tend to like mine packed with banana, so I use 4!)
  • 1 cup strawberries finely diced
  • 2 TBSP ground flaxseed meal
  • 1/4 cup water
  • 1/4 cup monk fruit sweetener or can sub in cane sugar & use 1/3-1/2 cup
  • 1/3 cup unsweetened apple sauce
  • 1/4 cup light brown sugar
  • 2 TBSP coconut oil melted
  • 1/2 TBSP vanilla extract
  • 1 TSP baking powder
  • 1/2 TSP salt

Instructions
 

  • Preheat oven to 350 degrees. Coat a 9x5 loaf pan with cooking spray.
  • Make the flax egg by combining the ground flaxseed and water in a small bowl. Stir and let it sit.
  • If using dry oats, place them in the food processor and pulse until finely ground.
  • Place oat flour in a mixing bowl.
  • Add in the monk fruit, brown sugar, baking powder and salt. Briefly stir.
  • Add in the flax egg, apple sauce, melted coconut oil, vanilla and mashed banana. Stir just until combined. Fold in the strawberries. Stir again.
  • Pour the batter into the loaf pan, and bake for 50 minutes-1 hour, or until a toothpick comes out of the middle of the banana bread clean.
  • Allow the bread to cool before cutting into slices. Enjoy!
