Preheat oven to 200 degrees.
First, prep the crust: Combine the warm water, sugar and yeast in a mixing bowl. Let it sit for 5 minutes or until it becomes foamy.
Add in the olive oil, salt, and flour 1 cup at a time. Stir together well, then transfer the mixture to the counter and knead for 5 minutes.
Turn off the oven. Transfer the dough to a greased bowl, cover it with a dish towel, and place it in the warm oven to rise for 30 minutes. The dough should about double in size.
While the dough is resting, prep the apples: Peel and thinly slice the fruit. Place the apples in a colander, then toss them with the lemon juice and sugar.
Leave the apples in the colander while prepping the oat crumble: Combine the oats, flour, brown sugar, cinnamon and pinch of sea salt in a bowl. Drizzle in the melted coconut oil and stir until evenly combined. Set aside.
Once the dough has risen, remove it from the oven and roll it out to a pizza dough with a rolling pin and a bit of flour.
Preheat the oven to 425 degrees.
Arrange the apple slices onto the dough. Spoon the oat crumble on top. Bake the pizza for 15 minutes, or until the crust is lightly browned.
While the pizza bakes, make the caramel sauce: Combine the maple syrup, coconut oil, almond butter, cinnamon and vanilla in a small saucepan over medium low heat. Warm until the mixture becomes bubbly, stirring often.
Once the pizza is done cooking, remove it from the oven and drizzle the caramel sauce on top.
Allow the pizza to slightly cool, then cut it into slices and enjoy.
