It's been feeling pretty summery here in Connecticut, and it's been nice to set up all of my backyard furniture, relax in my hammock, and get some Vitamin D and color on my face. My freckles are starting to peak out and I'm not mad about it at all. My baby loves being outside just as my husband and I do, and with trails starting to open up around here, we've been taking advantage by going for weekend hikes as a family. Healthy Cherry Berry Cobbler {dairy free}
Who else has been soaking up the season and eating a ton of summertime fruit? Today's cherry berry cobbler is a healthier take on traditional fruit cobbler - sans butter and white flour, packed with fresh fruit and bursting with flavor. Instead, we use whole wheat flour, coconut oil, and a moderate amount of honey and cane sugar. I love that cobbler is perfectly acceptable any time of day for dessert, brunch, or a snack. Just take your pick! If making it for brunch, I like to pair it with yogurt or serve it all on its own. If making for dessert, I'm all about throwing a scoop of vanilla ice cream in there. Any way you slice it, this cherry berry cobbler ... [Read More]

But that was not the case! Less than a week after my husband and I went strawberry picking, we had eaten the entire bucket. What can I say, we both are big strawberry fans (I mean who doesn't like strawberries?!). Luckily, I did have the chance to ... [Read More]
Crispy Chickpea, Avocado & Tomato Lettuce Wraps with Nacho Cashew Cream [vegan]
These flavorful, filling lettuce wraps are made with crispy chickpeas, diced avocado & tomato, & dairy free cheese made from cashews! They're perfect for a low-calorie, nutritious dinner or appetizer. If there's one food that I usually recommend to people to eat more of, it's beans. They're so healthy and versatile, and it's so easy to incorporate beans into my dinners. I use black beans in Mexican dishes all the time, but the bean that I probably like the most is garbanzo. There's just one problem: My husband, who I've slowly turned into a black bean eater, isn't crazy about chickpeas. Sometimes I'm sneaky about getting him to eat chickpeas, and I've learned that he likes them in certain ways. After I typed that sentence, I realized that I sound like I'm talking about a 3-year ...
