Crispy Chickpea, Avocado & Tomato Lettuce Wraps with Nacho Cashew Cream [vegan]
These flavorful, filling lettuce wraps are made with crispy chickpeas, diced avocado & tomato, & dairy free cheese made from cashews! They're perfect for a low-calorie, nutritious dinner or appetizer. If there's one food that I usually recommend to people to eat more of, it's beans. They're so healthy and versatile, and it's so easy to incorporate beans into my dinners. I use black beans in Mexican dishes all the time, but the bean that I probably like the most is garbanzo. There's just one problem: My husband, who I've slowly turned into a black bean eater, isn't crazy about chickpeas. Sometimes I'm sneaky about getting him to eat chickpeas, and I've learned that he likes them in certain ways. After I typed that sentence, I realized that I sound like I'm talking about a 3-year ... Sweet ‘n Salty Roasted Chickpeas
Hi friends! Hope you had a fabulous Valentine's Day weekend. My V Day was nice and low key. I made tomato basil soup and asparagus risotto for a cozy dinner at home, and we drank a bottle of California zinfandel from Cline Cellars.... ...and we enjoyed strawberries, chocolate and port for dessert. My hubby got me gorgeous pink roses that I've been staring at all weekend, and I surprised him by booking a getaway to Lake Tahoe for this weekend. Adam has been there for work and raved about how beautiful it is, and I've never been there, so I thought it'd be an awesome spot to spend a long weekend. It's actually totally coincidental that I booked the trip right around V Day, but we're definitely looking forward to it! Other yummy highlights of my weekend were a Mexican salad.... ... [Read More]
Things I’m Digging Lately
Happy Friday! Today I'm sharing some random things that I've been loving lately. Here we go: roasted chickpeas. Several times over the past couple of weeks I've popped open a can of chickpeas, drizzled a bit of olive oil and sprinkled salt, paprika, and garlic powder on top, and baked them in the oven. After they're cooked, I sprinkle pumpkin cajun bread crumbs - from San Diego-based company Panache Pantry - on top. They're crunchy, a little spicy and delicious! The exact recipe can be found here. my new bracelet. While I was in Venice in September, I got the bracelet pictured above. I love having a souvenir I know I'll use like this one that brings back great memories. Every time I've put it on since then, I think of how much fun I had on vacation! the ponytail ... [Read More]
Chickpea & Brown Rice Salad
Hi there! I spent a couple of hours this evening volunteering at the Humane Society, and got to play with some pretty adorable dogs. Getting good pictures of puppies is a nearly impossible task: Such sweet little puppies! Moving onto food, today I'm sharing all of my eats for the day: My breakfast today was packed with a ton of vitamins and nutrients: I'm keeping up with my green juice a day! A few hours later when my stomach was growling, I threw together this salad: In the Mix: Radicchio lettuce mix A serving of Gardein mandarin orange crispy chick'n 1/4 cup dried cranberries 1 TSP sesame seeds 1/2 TBSP sesame oil 1/2 TBSP rice vinegar Adam and I went mountain biking late this afternoon. Post-workout, I whipped up this dinner really quick: Lately I've been putting ... [Read More]
Artichoke & Chickpea Salad
Happy Hump Day! Today I want to share a couple of things that I'm loving this week: #1 - My new Oakley sunglasses I stopped by the mall yesterday to do my last Christmas return and wound up getting a new pair of sunglasses. I have super sensitive eyes and have always relied on high-quality sunglasses to help protect my peepers when I'm outside. This is my first pair of Oakleys. I like them because they're sporty but also good for everyday wear, and they're also polarized, which I think is really neat. I tried them out today during a lunchtime walk around my neighborhood trail with Harley. She wanted no part in taking photos with me... ...though I certainly tried: #2 - My gym: Last night I did a group class at my neighborhood's gym for the first time in quite awhile. I didn't know if ... [Read More]
