Made with healthy ingredients like oats and hemp hearts, these blueberry cashew energy bites make for a great on-the-go snack!
Lately I’ve been ALLLLL about energy bites.
Whipping up a batch of them is one of the few meal prep things that I do most weeks. I have a few go-to recipes, including my nut-free sunflower oat energy bites. Today’s recipe is another favorite.
In my household, energy bites are one way we avoid getting to the point of hangry – when you’ve gone too long between meals, blood-glucose levels dip, and you start feeling shaky and irritated.
But if you go for junk food simple carbs as a snack, like potato chips, your blood-glucose levels will rise quickly, and then crash again quickly. The best kind of snack is one that provides your body with a combination of complex carbs, healthy fat, and protein to stave off hungry and give you a nice little energy boost. Today’s blueberry cashew goodness is a snack that fits the bill.
The Recipe
Oats are a gluten-free whole grain that provide a good source of carbs, fiber, vitamins, minerals, and antioxidants, while the cashew butter + cashews in this recipe contain heart-healthy fats. Hemp hearts are a rich source of nutrition and contain omega fatty acids, while dried blueberries contain healthy carbs.
Whip these blueberry energy bites up at the beginning of the week, and keep them around to snack on during those busy weekdays when you’re in need of something to hold you over until your next meal.

Blueberry Cashew Energy Bites
Equipment
- 1 Food processor
Ingredients
- 1/2 cup dried blueberries
- 1 cup old fashioned oats
- 1/4 cup cashew butter
- 3 TBSP hemp seeds
- 2 TBSP honey or maple syrup
- 1/4 cup cashew pieces (I like roasted and salted ones but raw and/or unsalted works well too)
- 1 TSP vanilla extract
- Pinch of salt
Instructions
- Combine all ingredients in a food processor. Pulse until the mixture is mostly ground and sticky.
- Check the consistency: The mixture should stick together pretty well in your hands. If it seems a bit dry, add a 1/2 TBSP of water in and process again briefly.
- Spoon the energy bite batter out of the food processor, and roll into 12 bites.
- Store in a closed container and they should stay fresh for up to a few weeks!
