1/4cupcashew pieces (I like roasted and salted ones but raw and/or unsalted works well too)
1TSPvanilla extract
Pinch ofsalt
Instructions
Combine all ingredients in a food processor. Pulse until the mixture is mostly ground and sticky.
Check the consistency: The mixture should stick together pretty well in your hands. If it seems a bit dry, add a 1/2 TBSP of water in and process again briefly.
Spoon the energy bite batter out of the food processor, and roll into 12 bites.
Store in a closed container and they should stay fresh for up to a few weeks!
