Blueberry Cashew Energy Bites

These bites make for a healthy on-the-go snack

Equipment

  • 1 Food processor

Ingredients
  

  • 1/2 cup dried blueberries
  • 1 cup old fashioned oats
  • 1/4 cup cashew butter
  • 3 TBSP hemp seeds
  • 2 TBSP honey or maple syrup
  • 1/4 cup cashew pieces (I like roasted and salted ones but raw and/or unsalted works well too)
  • 1 TSP vanilla extract
  • Pinch of salt

Instructions
 

  • Combine all ingredients in a food processor. Pulse until the mixture is mostly ground and sticky. 
  • Check the consistency: The mixture should stick together pretty well in your hands. If it seems a bit dry, add a 1/2 TBSP of water in and process again briefly.
  • Spoon the energy bite batter out of the food processor, and roll into 12 bites. 
  • Store in a closed container and they should stay fresh for up to a few weeks!
