Happy, happy Friday!
Hope that you all have some fabulous plans for the weekend. I’ve had a great week in Jersey hanging out with family and girlfriends, and have some fun plans that I’m looking forward to for the weekend. My week has been full of good food, and there are definitely certain eateries that I simply must hit up when I’m in town. One of those places is Veggie Heaven (my post on the restaurant can be viewed here), which I just chowed down on for dinner:

And speaking of yummy, healthy Asian food, I have a new recipe to share today!
So, I definitely go through different phases of food obsessions. There are singular food obsessions, like a certain nut butter or fruit that I can’t get enough of for awhile, and then there are times when I get into these obsessions with one type of cuisine. This has been going on with Asian-inspired meals — sesame seeds and soy sauce are really doing it for me lately! 😉
After creating my spicy vegetable wonton soup recipe, I was craving a stir fry dish with similar ingredients to my wonton filling: tofu, veggies like broccoli, shiitake mushrooms, and baby bok choy…
…and commonly used ingredients to create those quintessential flavors in Asian dishes: sesame oil, brown rice vinegar, soy sauce and sesame seeds.
To me, tofu is all about what you cook it with. I can go months without eating tofu, and then I’ll find a type of dish that it’s perfect in and I remember that I like it again. An Asian stir fry, my friends, is a perfect match for extra firm tofu.
It pairs perfectly with the veggies and some yummy complex carbs of brown rice. I’ve made this dish twice so far, and if I don’t get out of my Asian food phase, I’m sure I’ll be making it again soon!

Veggie Tofu Stir Fry with Brown Rice
Ingredients
- 12 oz extra firm tofu block squeezed to remove excess water
- 1 large broccoli head
- 3.5 oz shiitake mushrooms
- 3 cups brown rice cooked
- 2 TBSP green onion
- 2 TBSP brown rice vinegar
- 1 TBSP of sesame oil plus more for drizzling
- 2 TBSP soy sauce
- 4 TSP sesame seeds
- 1 head baby bok choy
- 2 TBSP water chestnuts optional
- 1/4 TSP crushed red pepper
Instructions
- Slice the mushrooms, green onion, water chestnuts, baby bok choy and broccoli.
- Heat 1 TBSP of brown rice vinegar in a large saucepan over medium heat. Add the broccoli and cook for 3 minutes.
- Add another TBSP of brown rice vinegar and the sesame oil to the pan. Stir in the remaining veggies.
- Using your hands, crumble the tofu block up. Add to the pan, and season with crushed red pepper. Cook for 5 minutes, stirring a few times.
- Add another TBSP of soy sauce, and stir the brown rice in. Evenly combine the mixture.
- Divide into 4 bowls. Sprinkle each with 1 TSP of sesame seeds and a drizzle of sesame oil into each bowl, and serve immediately.

I have a thing for Asian food too. I enjoy making a quick veggie stir fry with rice noodles. Your recipe reminds me that’s a long time since I made scramble tofu. I’ll make something similar (I don’t have brown rice at the moment) for dinner this evening!

I like the idea of crumbling the tofu! I bet that makes it a lot easier to cook. I haven’t had any luck cooking tofu even though I know it’s supposed to be easy haha
I know what you mean – for awhile when I first started cooking with tofu I just couldn’t get it right. Try crumbling it!

haha oh man I definitely get on all kinds of food obsessions! Right now it’s almond butter and mexican (which is pretty much always!). Love the sound of this stir-fry – it looks awesome!
