5 Delicious Ways to Eat Pancakes + My Go-To Batter

Hello and Happy Monday! Hope that you all had a great weekend.

Let’s dive right into my weekend highlights!

Workouts

After another awesome workout at Fitwall on Friday, I knew that strength training would need to be kept to a minimum over the weekend so that I could let my sore body recover. On Saturday morning, my little family and I headed to Elfin Forest to hit the trails.

Whew, it was one hot morning! We lasted about 90 minutes before heading home to cool down. I had some Cocogo on hand to keep me hydrated:

Electrolytes are a lifesaver when it comes to replenishing and hydrating during and post-workout, especially in the heat!

I forced myself to take an active rest day on Sunday, because although I love to go-go-go, my body needed a break. First thing in the morning, I rolled out my mat in my backyard to do some light practice and stretching. It’s always a great way to start my day!

Fun Stuff

Over the weekend, I got a present in the mail from my recently engaged best friend Meaghan, asking me to be her bridesmaid. I obviously said yes!

She already picked a wedding date for next summer in Jersey just a few days after my birthday, which means that I’ll be spending my birthday with family. I can’t wait for all of the wedding planning and festivities!

Also on the fun front, post-hike on Saturday, I spent some time lounging in my pool. The strong sun feels much nicer when I’m submerged in cold water! I try to get in my pool at least once a week (especially since a pool is a pain in the butt to take care of!) but it doesn’t always happen, so it was nice to take some time to swim and relax this weekend.

Food

On the eats front, my weekend was full of yumminess. On Saturday night, we had dinner at our friends’ house, and they made us some authentic Mexican food. I had cheese enchiladas, beans, rice and guacamole:

For the first NFL Sunday night football of the season, I made some spinach and artichoke dip for dinner the next night. Always a winner in my book!

As usual, smoothies were part of my diet over the weekend. I’ve been looking for a vegan protein powder that I actually like, and I found that in Manitoba Harvest. I had gotten a few free samples to try, and this is the best tasting vegan protein powder I’ve had to date. I had their chocolate hemp protein with chocolate soy milk, frozen strawberries, raspberries, banana, and cocoa powder for one refreshing meal:

This may come as no surprise to anyone really, but I had pancakes not once, but twice over the weekend! I’ve been consistently obsessed with pancakes for a few years now, and my love for them is not dying down in the least bit.

My Go-To Pancake Batter

Though I’ll play around with different pancake creations sometimes for fun, I have a go-to pancake batter that I mostly use as my recipe base. It’s pretty simple and not at all decadent, which is why I can make pancakes all the time and feel good about it – because they’re not just delicious, they’re healthy! Here’s my batter recipe:

  • 1/2 cup old fashioned oats
  • 1/4 cup whole wheat flour
  • 1/2 banana
  • 1/2 cup almond or soy milk
  • 1/2 TSP baking powder
  • Pinch of salt, cinnamon & stevia

I blend all of the ingredients in my high-powered blender to make a smooth batter. Sometimes I’ll make a smaller portion and only use 1/4 cup oats and 2 TBSP flour, then including 1/3 cup of milk instead of 1/2, but this is the ingredient base that I use for pancakes, and sometimes waffles as well. I’ve come up with many different toppings and variations for my pancakes meals, and I thought I’d share my favorites with you. Here we go!

1.) With grilled nectarine slices & honey – This is my newest tasty pancake creation. While I’m cooking the pancakes, I slice a nectarine, and throw the fruit in a pan coated with cooking spray over medium heat. I cook the slices until they’re lightly browned on each side, then I top the pancakes with them, drizzling honey & sprinkling cinnamon on top.

IMG_53082.) Chocolate protein waffles –  While pancakes are my absolute favorite, sometimes I use my go-to batter in my waffle maker. Sometimes I’ll make a post-workout meal of chocolate protein waffles to both satisfy my sweet craving while fueling my muscles. I add 1/2-1 scoop of chocolate protein powder, use chocolate soy milk instead of regular, and add some cocoa powder to the batter, then I top the waffles with a bit of good ole butter.

3.) Blueberry Greek yogurt pancakes – Another way I add some protein to the batter is use Greek yogurt. Sometimes I add 1/4 cup vanilla Greek yogurt, 1/4 TSP vanilla extract, and fresh blueberries for a tangier batter.

4.) Chocolate PB banana pancakes – Another obsession of mine is nut butter, so it’s only right that I include a peanut butter dish on the list. To make these, I add banana slices and a few chocolate chips on top, spread Peanut Butter & Co’s Dark Chocolate Dreams peanut butter, and sprinkle some of Nature Valley’s Oats & Dark Chocolate protein granola around. 5.) Chocolate strawberry pancakes – Rounding off my list is another fresh fruit/PB creation. I love to throw sliced strawberries into the mix, then drizzle chocolate PB 2 on top.

    OMG NIk! These pancakes look delicious! The recipe is actually very similar to the pancake recipe I use to make for you guys-lol! I am going to try them with the grilled nectarines. Can you use peaches instead? BTW your pics are really cute!!! I’m also drinking my cocogo right now!

    Oh my gosh pancake heaven! I love banana pancakes with chocolate chips 🙂 they’re so delish! I’ve also become a huge fan of Kodiak cakes, if you’ve ever tried those. Pancakes with a grainy/nutty texture are awesome too

    I’m so glad to see you’re finding some great trails in San Diego! It looks like a beautiful weekend.
    All of those pancake combos are making me drool! I have to admit, I prefer waffles but it’s nice to know the batter works both ways. I love the idea of chocolate protein waffles too, yum!

    Thanks for sharing this! My go-to pancake recipe is pretty similar… I think the banana makes all the difference! Have you ever tried adding a little Greek yogurt? It makes them super moist. PS I’m seriously drooling over your chocolate banana pancakes right now!

La Jolla is an ever popular area, but for good reason… It’s one of the most beautiful areas in San Diego ☀️ & my favorite time of year to visit is NOW when it’s Harbor Seals Pupping Season! 🦭

📍Casa Beach is closed off from humans from mid-December through mid-May for birthing & bonding, and most of the seal pups are born in February & March. They are so much fun to watch!

Last weekend we got to ride on the world’s largest rotating aerial tram car, the Palm Springs Aerial Tramway 🌴⛰️ Guests travel 6,000 feet up in just 10 minutes! 

Once we reached the top, we hiked a couple miles of trails in Mount San Jacinto State Park - where it was only 37 degrees and windy, brr! - and took in the beautiful views. 

Here are a few tips for optimizing a Palm Springs Aerial Tramway adventure: 

✨Show up early. We didn’t realize how big of a production this excursion would be, and when we arrived at 11 am, the wait time was 2 hours to ride the tramway. If I could do it over, I would show up at opening time. 

✨Bring breakfast. While they do have food options while you wait for your tram ride, it’s stereotypical not very healthy American food. Pick up food at a local cafe and bring it with you to enjoy outside. We love @palmgreenscafe!

✨ Bring extra clothes. The temperature at 8,500 ft elevation varies from 20-40 degrees colder, so make sure to pack a jacket, sweatshirt, hat, even gloves.

Who else is pumped for the Olympics to start?! 🇺🇸

This curling competition experiment is a hit with my kiddo! Here’s how to make it: 

You’ll need: 
✨A rimmed baking sheet
✨Aluminum foil 
✨Permanent markers (we used black + red) 
✨A variety of pebbles 
✨Optional: buttons, craft pom-poms and other objects to experiment playing with 

1️⃣ Spread foil across your baking sheet. Draw the starting line on 1 side and a small circle inside a large circle on the other side. 

2️⃣ Place your “rink” in the freezer, then fill it with water halfway up the sides. Chill until it’s totally frozen. 

3️⃣ Time to play! Each player picks 3 pebbles. Take turns using a finger to push your pebble towards the target. 

🥌 Pebbles that land in the inner circle = 3 points each 
🥌 Pebbles that land in the outer circle = 1 point each
🥌 3 rounds = 1 game 

❗️Players can hit other pebbles & knock them out of the circles, which is fun! 

❗️Once all players use their pebbles, that’s the end of round 1. Tally the scores as you go!

Welcome to my new series, Easy Plant-Based Meals, where I share simple, nutritious meals that I make for my family on the regular. 🥦🥕🥬🧅🧄🫘🫑
 
Today I’m making Garlic Pearled Couscous with Roasted Chickpeas & Veggies. 

Here are the ingredients you need to serve 4: 

1️⃣ 2-3 boxes of Near East Pearled Couscous with Roasted Garlic & Olive Oil (I find that 3 boxes yield about 4.5 cups; you can also use a plain pearled couscous)
2️⃣ 1 can garbanzo beans 
3️⃣ 4 TSP avocado oil 
4️⃣ 1 zucchini 
5️⃣ 1 bell pepper
6️⃣ 2T-1/4 cup pine nuts, optional but I like the added heart-healthy crunch
7️⃣ Salt, pepper & paprika to taste 

Directions:
1️⃣ Preheat oven to 375. Drain & rinse chickpeas, then add to a baking dish. Add 2 TSP of avocado oil, and a nice sprinkle of salt, pepper, and paprika to taste. Mix it up, then cook for 25 minutes, stirring halfway through. 

2️⃣ Cook the couscous according to the box directions. 

3️⃣ Heat 2 tsp avocado oil in a sauté pan over medium-low heat. Chop the zucchini and bell pepper, add a sprinkle of salt & pepper, then cook until tender. 

4️⃣ Lightly toast the pine nuts. 

5️⃣ Plate the couscous, add the roasted chickpeas & veggies on top, & sprinkles pine nuts onto each plate. Enjoy!

🌎 The largest National Park in the contiguous U.S. - 3.4 million acres! - did not disappoint 🔥 Here’s what we had on our agenda for Day 2️⃣ of exploring Death Valley National Park: 

📍Explore the Mesquite Flat Sand Dunes
🛷Go sledding down the dunes! 
🥾Hike Mosaic Canyon Trail ~ a 3.5-mile out & back trail with 974 ft elevation gain. This trail was so much fun & the rock formations are gorgeous! My daughter loved climbing & bouldering around. It features some cool slot canyons and difficult rock scrambling - our kinda speed! 
🚰 Refuel at Stovepipe Wells Village ~ Nearby pitstop within the park for gas, restrooms, a general store & restaurants
