Blueberry Cashew Butter Energy Balls + 5 Of My Favorite Vegan, Gluten Free Energy Bite Recipes

When it comes to my eating patterns, I’m definitely more of small meals & snacks kinda girl. I like to eat every 3-4 hours, and feel like my body operates best this way.

If I eat a big meal, my belly feels heavy and too full, but when I eat smaller meals & snacks throughout the day, I feel great. Because of this, I always have lots of snacks around: in my purse, gym bag, car and obviously my pantry. Having healthy snacks around is the key to me not getting hangry!

One of my favorite kind of snacks is energy balls. I like to whip up a batch during the weekend to have on hand throughout the week. But since I get bored easily, I like to switch up my energy bite combos & am constantly coming up with new kinds. My latest energy ball creation are these Blueberry Cashew Energy Bites.

Made with rolled oats, cashew butter, raw cashews, hemp hearts, dried blueberries, and honey, they’re the perfect little snack full of healthy fats, carbs and protein.

{Note: Maple syrup, agave, or brown rice syrup can be substituted for honey to make them vegan.}

Peppermint Chocolate Chip Snack Bites {vegan + gluten free}

Earlier this week, I sent out a health coaching newsletter with tips to avoid holiday weight gain (you can subscribe via the signup form on the right sidebar! –>), and one of my guidelines is to implement an 80/20 diet balance.

I’ve talked about this concept before, but it’s the idea that 80% of your calories are from nutritious, healthy choices, and for the other 20%, you enjoy whatever indulgences you’re in the mood for. I apply this to my diet not only during the holiday season but year-round, because I believe that moderation is what works in the long haul for a healthy, sustainable relationship with food… which brings me to today’s recipe!

We all know that December is ripe with food and drink indulgences. I adore baking Christmas cookies and drinking seasonal drinks like spiked warm cider, but I also balance those treats out with healthy, light meals and a very active lifestyle.

Chocolate Cake Batter Chia Energy Bites {vegan + gf}

Energy bites are a favorite snack in my household. I’ve even turned my immediate family on the east coast onto energy bites, because I’m always whipping them up when I visit as a healthy snack to have around.cake-batter-energy-bites-1

And as a big fan of keeping things interesting in the kitchen and in life in general, I’m always coming up with new energy bite combinations. Today I’ve got a new one to share: chocolate cake batter chia energy bites!

Made with oats, plant-based protein powder and chia seeds, these vegan, gluten free bites pack a nutritious punch. They get their cake batter flavor thanks to the combo of cashew butter, cinnamon, vanilla and cocoa, and are sweetened with dates and maple syrup.

Cherry Pistachio Energy Balls [vegan, gf]

Hi friends! Today we’re talking about nuts and balls! 😉

Everyone has their go-to favorite foods that they’re constantly eating, and for me, one of those categories is nuts + nut butters. I usually eat a serving of one on the daily. Healthy fats like nuts keep my belly happy & satisfied.

Almond butter and peanut butter are my all-time favorites, and I was pretty into cashews & cashew butter for awhile there. Somehow I tend to forget that I like pistachios too.

Currently Loving: My Top 5 Travel Snacks

Happy Friday!

What are your plans for the official first weekend of summer? In thinking about my summer season, the next month or so is going to hopefully include lots of local SoCal fun, and then the month after that will involves lots of travel and time away from home. When I’m on-the-go traveling, especially if there are long car rides and/or long flights involved, one of the things I make sure to do is bring healthy snacks.

I just don’t think you can ever go wrong with bringing healthy food with you. It usually comes in handy at the times I prep for it – like at lunchtime on a plane – but I also find that it’s great to have snacks on hand for random times when hunger strikes. For instance, if I’m going out to dinner later than I normally eat, a snack packed in my bag comes in handy to hold me over.

So far this year, here are my 5 favorite (very portable) travel snacks!

Chocolate peanut butter energy bites. I find energy balls to be the perfect little pick-me-up! I threw a bunch of them in a plastic bag and brought some to Cabo with me last month.

No Cow bars. I recently started eating these bars by D’s Naturals, and have quickly become a big fan. They’re dairy free, and are made with organic brown rice and pea proteins and sweetened with monk fruit and stevia. At 170 calories & 20 g of protein a pop, they pack a great protein punch – especially because when I’m traveling sometimes the protein in my diet can be lacking a bit. The bars also have a ton of fiber – which is great to keep your digestive system regular when you’re traveling and eating a diet that’s different from your norm (TMI?!).

Cherry Coconut Chocolate Chunk Hemp Granola [gf, vegan]

Happy Hump Day!

How’s your week going? I’ve gotten back into the swing of things in SoCal since getting back from vacation. While Mexico was a dream, it’s not too shabby coming home when you love where you live, so I can’t complain! My work week is a bit more exciting than usual because an East coast friend of mine is in town and will be staying with me for a few days. I love when friends from out of town visit!

But I digress, onto food…

Question of the day: Coconut – do you love it, hate it, or feel indifferent to it?

I used to not like coconut at all, and then all of a sudden last year, I developed a thing for shredded coconut. While I still don’t love most coconut flavored things, coconut shreds are now routinely sprinkled on top of my smoothie bowls – hence why I’ve shared two smoothie recipes on the blog with coconut: a chocolate coconut caramel smoothie and banana coconut match smoothie.

One coconut product that I’m sure you’ve seen everywhere is coconut oil. It’s undoubtedly one of the ‘it’ things in the healthy food world these days. A few of the many benefits that coconut oil lovers tout are its heart protecting and disease prevention properties, along with helping to curb appetite and improve digestion.

So, I hopped on the bandwagon and started experimenting in baking and cooking with coconut oil more. My conclusion? While I don’t mind baking with coconut oil if I’m making something coconut-y, I’m not really a fan of using it in things that shouldn’t taste like coconut in my opinion… as in, I don’t like my banana cinnamon muffins to have an underlying coconut taste to them.

But a recipe with coconut oil where coconut is actually one of the star flavors? That I can get behind. Thus, today’s recipe…

Apricot Almond Energy Bites [vegan, gf]

Hello, hello!

I hope that you had a lovely weekend. Mine was pretty relaxing except for some power outage shenanigans. My hubby was away for the Marine Corps, and on Friday night my pup and I went for a long sunset walk along the beach. We came home to the power being out and I was unable to get into my house. Let’s just say I had to get creative and borrow a neighbor’s garbage can to hop onto and climb over my fence to get to a spot where I could let myself in. It was eventful! I was pretty proud of myself for being resourceful. 🙂

Besides that little bit of craziness, it was a low-key weekend. My cousin visited from Long Beach and stayed with me. We took Harley for a little hike at a nearby park, and went out for Mediterranean food, wine and live music on Saturday night. It was nice getting some quality cousin time in!

Another thing I did over the weekend? Apricot Almond Energy Bites

Whip up a batch of these energy bites… and proceed to eat four of them for lunch! While I usually make energy bites with dates, I’m definitely loving this change-up of using apricots instead.

I’ve been eating fresh apricots since they’re in season right now, but for this recipe, dried fruit is used. The stickiness of the dried fruit is the glue that holds these energy balls together. apricot almond energy bites-1

Chocolate Peanut Butter Brown Rice Crispy Squares [vegan, gf]

Hi friends!

Long time no talk. I’m home from my vacation – what an awesome time it was! – so I’m back to normal life at home in SoCal for a few weeks before my next trip (Vegas for work). I’ll be recapping my wine country vacay soon on the blog, but today? Let’s talk chocolate peanut butter treats!

Since we were going to be in the car traveling a lot on vacation, I made sure to pack lots of snacks. I always pack some sort of snacks on trips, but between the long drive from the San Diego area up to San Francisco, then heading up to Sonoma, then driving around wine country vino tasting for a bunch of days, then lastly making the trip back home, I knew that snacks would be a necessity. And today’s recipe made the cut to travel with us in my bag of goodies!

I also just made another batch of these rice crispy snacks when my father-in-law was recently in town staying with us, and I got a big thumbs up from his sweet tooth lovin’ self. I mean can we really go wrong with chocolate + peanut butter, aka the best food combination ever?! Not in my book.

This recipe is not only a crowd pleaser, it’s definitely healthier for you than those popular blue wrapper Rice Krispy Treats that contain ingredients like margarine, gelatin and corn syrup solids.

WIAW: Easy Eats + Snacking on Kala Beans {Review}

Hello, hello!

Today I’ve decided to switch it up & do something I haven’t done in quite awhile: participate in the What I Ate Wednesday party, hosted by my friend Laura this week!

This is actually a recap of my day of eats one day last week when I actually remembered to snap photos of every meal. Let’s get to it!

For breakfast in between my morning yoga practice and a conference call, I made a berry smoothie bowl and topped it with coconut shreds and blueberries. So good! I think that fresh blueberries + coconut is a new favorite combo of mine.

Early afternoon, I took a break from work to take my pup for a walk and make some lunch – which was really breakfast #2: banana protein pancakes with blueberries, a few dark chocolate chips & honey + Yogi green tea.

A bunch of hours later, I noshed on a Luna bar as a pre-workout snack while finishing up a writing assignment.

Bars = the easiest snack ever. I have bars all over the place – in my car, gym bag, purse, beach bag, and probably a few other places.

For dinner, I tried out Morningstar Farms’ new white chili bean burgers. I placed one on a slice of whole wheat toast and topped it with mashed avocado + salsa, along with a salad on the side.

Who says healthy can’t be convenient? Dinner was ready in 10 minutes flat!

As a snack a bit later, I ate a few handfuls of Kala Beans pineapple kick medley – which is a mix of roasted fava beans and orange-glazed chickpeas with pineapple, blueberries and paprika. It’s a bit of a sweet & spicy kick, and I liked this sort of strange but good combo!

Recently Kala Beans sent me an adorable package of their bean snacks to try out. It’s no secret that I’m a big fan of beans. They’re a wonderful plant-based protein source that pack in lots of nutrients, including iron, magnesium and zinc.

One of my favorite ways to tout beans and their benefits in conversations is to reference Blue Zones, which has explored the communities around the world where people live the longest to research how they’re doing so and what their secrets are. While these communities differ a lot, they also have a lot of commonalities…. one of which is the daily eating of beans! People in these communities also eat lots of veggies & fruit, little meat, and usually drink wine nearly daily (yes!)… but I digress.

Chunky Monkey Protein Bites [vegan, gf]

It’s Friday, and I feel like this Friday calls for a chocolatey recipe! Shall we dive into it?

I’ve often mentioned my love for on-the-go snacks on the blog. Even though I work from home most of the time, I seem to always be eating in my car bouncing around from place to place. I have the protein bar and smoothie stains on the seat of my car to prove it. Whoops.

I often whip up some type of bars or balls to have as snack options throughout the week, and today I have a new one to share that I’m loving: Chunky Monkey Protein Bites.   Chunky Monkey Protein Bites-1

We’ve got some rolled oats, chocolate protein powder, cocoa powder, and hemp hearts as our base. These ingredients get thrown into the food processor with some smooth peanut butter, maple syrup, and banana to hold them together well.

Pulse until it forms a dough, roll into balls, and they’re ready to go!
