Hi there! I'm a day late in posting this, but in honor of Martin Luther King, Jr. Day being yesterday, here are a couple of my favorite of his quotes: Ever have days that you feel like are just off? Today was definitely one of those days. I was having an issue with my Mac where 2 of the keys weren't working right, so I had to drop my computer off at the Apple store for a repair yesterday. Because of this, I had to work on my iPad and hubby's PC today, neither of which I know how to use that well, without any of my files or previous emails on hand. It was a pain in the butt but I worked through it without getting too frustrated, and luckily my computer was ready to pick up later on today. My off work day rubbed off on me when coming up with what to make for dinner. I had just come home ... [Read More]

Blueberry Lemon Oatmeal Flaxseed Pancakes
Hi there! Before I get to my awesome pancake recipe today, I have a few random things to share with you: 1.) This week I officially started school at the Institute for Integrative Nutrition! I'm really excited about the class and connecting with other students. I just feel like everything I've read, seen, and heard so far at IIN resonates with me so much and makes me feel so motivated. I'll definitely be sharing some concepts and ideas of the course that I find interesting throughout the year, so stay tuned! 2.) I'm in love with ordering canvas prints of neat photos I've taken. The above canvas is my latest order, which I got for $20 via a Groupon deal. The picture is from my trip to Livermore Valley last year during harvest season, and I'm pretty much in love with it. 3.) My giveaway ... [Read More]
Apple Dapple Pancakes & My Favorite Breakfast Recipes
I think that one of the reasons why I'm always cooking and creating recipes is because I had my mom and grandma as cook role models growing up. Both of them have always enjoyed spending time in the kitchen making meals for the family to enjoy. To us, food is love. You still can frequently find my 80-year old grandma in her massive kitchen, complete with 3 ovens, 6 burners, and plenty of counter space to work, cooking up a storm. Her first questions when you walk into her house are always, "Are you hungry? Do you want something to eat?" We've learned to never go to her house already full. She's a persistent little lady, and even if you initially say no, it's almost guaranteed that you'll somehow wind up with a plate in front of you. Today I'm guest posting on My Own Balance (a blog I ... [Read More]
Pumpkin Spice Pancakes with a Cinnamon Pecan Topping
Happy Friday!! Before I get to this deliciousness, my first pumpkin recipe of the fall... ...I have a few things to chat about. One, after much time and frustration I HAVE FIXED MY ANNOYING BLOG ISSUE! I thought that something was funky a couple weeks ago while I was in Europe, but I thought it had more to do with my traveling and using random Internet networks than anything else. When I came home, it seemed to get even worse, but then I had to get ready for my Seattle trip. Long story short, yesterday was the first time I had the hours & energy to figure out what the heck was happening. The first person I spoke to at Bluehost (my server) was very little help and sent me into a tizzy trying to figure out what all of this technical stuff was that could have been the culprit. ... Blueberry, Banana -n- Oats Pancakes
At the beginning of each new year, I constantly find myself entertaining thoughts of ''firsts." Yesterday was my first hike of 2013 (and Adam and Harley's too!). Now that I'm getting over this energy zapping cold (WOOHOO!!), today I had my first gym session of the year. And a few days ago, I whipped up my first pancake recipe of 2013: These pancakes are full of goodness -- blueberries high in antioxidants, bananas loaded with potassium, and fiber-full oats. I topped them with a bit of drizzled honey, which added the perfect touch to these fluffy pancakes. Blueberry, Banana -n- Oats Pancakes 1/2 cup old fashioned oats1/2 cup fresh blueberries1/2 medium banana3/4 cup unsweetened almond milk1/4 cup all-purpose flour1/2 TBSP baking powderA sprinkle of salt Puree ... Cinnamon Apple & Banana Pancakes
With cooler temperatures hitting most of the country as fall is well underway, you'd barely realize it living in San Diego. We did have a few days last week with temperatures around 70 degrees. I kept seeing people walking around with heavy jackets and boots on, and all I could think is that San Diegans are desperate to pull out their chilly weather clothing! This weekend was back to warmer temperatures. My favorite is when temperatures are in the low 70s, but don't think I'm complaining. Laying on the beach earlier today and enjoying the gorgeous warm sunshine wasn't too terrible. ;-) Even though it still feels a lot like summertime, I've been embracing a lot of autumn things -- including my pumpkin obsession lately, picking up some fall-ish goodies during a farmer's market trip ...
