Chocolate Hazelnut Butter Brownies [vegan]

Who’s in the mood for some dessert?

If you have a sweet tooth like me, you read that and thought it was a trick question.. When could I not go for dessert?!

I’m excited because today’s post is in celebration ofΒ Izzy fromΒ She Likes Food. Izzy is expecting a baby boy, and some other blogging ladies and I are throwing her a virtual baby shower to celebrate!

I’m “bringing” a chocolatey crowd pleaser to the party. I don’t think I’ve ever met a soul who doesn’t like brownies, and today’s recipe takes a twist on classic brownies.

Chocolate Hazelnut Brownies

It all started when my first Thrive Market order recently arrived. For anyone not familiar with them, Thrive Market is an online food delivery service that offers lots of organic, healthy products for cheaper than you typically see in stores. I’ve seen the CEO speak at a few events, love their mission to make healthy living easy and accessible for every American family, and I had been meaning to order through them for quite awhile.

When complimentary annual memberships kept coming my way, I finally joined andΒ placed my first order. My box contained some of my current favorite foods, including Enjoy Life chocolate and Justin’s hazelnut butter.

I immediately became obsessed with the hazelnut butter. While I’ve loved Justin’s nut butters for quite awhile, I hadn’t bought a jar of theirs in a bit, and this purchase reminded me of my love for chocolate hazelnut butter.

IΒ ate itΒ every day that week before coming up with the idea that this nut butter would be awesome in brownies.

After that lightbulb went off in my head,Β I was on a mission to make chocolatey vegan brownies with a hazelnut twist…

…and here’s my recipe success!

Note: I haven’t tried it, but for any gluten free foodies, I think that using gluten free baking flour instead of whole wheat flour would work just fine for these brownies.

Chocolate Hazelnut Butter Brownies

Ingredients
  

  • 1 cup whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup chocolate hazelnut butter preferably Justin's brand
  • 1/3 cup Earth Balance vegan buttery spread or regular butter for a non-vegan version
  • 1/3 cup mini chocolate chips
  • 2 flax eggs: 2 TBSP ground flaxseed + 1/4 cup water
  • 1/2 cup light brown sugar
  • 1/2 cup cane sugar
  • 1/4 cup water
  • 1 TSP vanilla extract
  • 1/2 TSP fine sea salt

Instructions
 

  • Preheat oven to 350 degrees.
  • In a small sauce pot over medium low heat, melt the chocolate hazelnut butter and Earth Balance buttery spread, stirring often. Add in the flax eggs, vanilla and sea salt, stirring to combine.
  • Combine the flour, cocoa powder and sugars in a medium bowl. Pour the hazelnut butter mixture into the bowl. Add in the 1/4 cup of water, and stir batter with a wooden spoon. It should be fairly thick.
  • Coat an 8x8 pan with cooking spray.
  • Mix the mini chocolate chips into the batter, stirring again with a wooden spoon. Pour the batter evenly into the pan, pressing down firmly.
  • Bake for 20 minutes or until a toothpick comes out clean. Allow to slightly cool before cutting into squares.

Notes

*Note: I haven't tried it yet, but using gluten free flour instead of whole wheat to make the recipe GF should work just fine.

    Thank you so much, Nicole!! It’s funny because brownies are one thing that I’ve been craving these last few months but I still haven’t gotten my hands on one! These look so fudgy and delicious and I love the hazelnut butter in them! I just ate breakfast but now I want brownies, lol! πŸ™‚

    Chocolate hazelnut and brownies make a wicked combination! I wouldn’t be able to walk away from these delicious treats, and they’re so great for Izzy’s shower! I’ve not yet tried Justin’s Chocolate Hazelnut Butter but I definitely need to. πŸ™‚

      Yes I did get coconut butter – as a freebie in the package actually, but I’ve bought it a few times before. I feel like the healthy eating world is obsessed with coconut butter! I use it for baking sometimes, but am not a fan of using too much of it… It’ll give the baked goods a coconut flavor that I’m not too crazy about, unless the recipe has coconut shreds in it as well.

After all, they say to marry the one who makes you laugh β€” and I, for one, highly recommend it❣️ Here’s to hoping the next 40 years are full of many more amazing adventures & accomplishments!

Our favorite parts: 
⭐️ Sultanahmet Square’s interesting historic sites, including the German Fountain & the Egyptian Obelisk 
⭐️ Visiting the beautiful Blue Mosque
⭐️ Exploring the historic district and trying the street food (Why is the ice cream so.. sticky?!🍦) 
⭐️ Venturing through the hectic Grand Bazaar 
⭐️ A delicious dinner @amedroscafe 
⭐️ Making friends with stray cats.. so many friendly cats! 🐈 As a huge animal lover, I adore that the city seems to take good care of its strays.. This is the first place I’ve ever been where they have vending machines to buy food for stray animals!

When I was newly pregnant with Camryn before we knew her gender, I had a vivid dream that I was picnicking with a little blonde girl in front of the Eiffel Tower. I woke up and told my husband, β€œGuess what? We’re having a girl!”

We got Camryn a passport at 5 months old with the idea that we’d visit Paris later that year and turn my literal dream into a reality. But then, COVID hit a few weeks later.

By the time we’d be comfortable traveling to Europe, we instead were selling our house in New England and traveling around the U.S. full-time.

We had adventures in plenty of other amazing places, but Paris remained a bucket list item.

…until now! Our picnic in Paris as a family of three may have happened a few years later than planned, but it was a bucket list item that was exactly how I’d pictured, perhaps even better.

It was such a magical evening staring at the Eiffel Tower, sipping champagne, and noshing on local food that we’d nabbed at shops around town ✨πŸ₯‚

β€” all the while, laughing & soaking up the night with our wonderful little girl. πŸ’—

When I was newly pregnant with Camryn before we knew her gender, I had a vivid dream that I was picnicking with a little blonde girl in front of the Eiffel Tower. I woke up and told my husband, β€œGuess what? We’re having a girl!” We got Camryn a passport at 5 months old with the idea that we’d visit Paris later that year and turn my literal dream into a reality. But then, COVID hit a few weeks later. By the time we’d be comfortable traveling to Europe, we instead were selling our house in New England and traveling around the U.S. full-time. We had adventures in plenty of other amazing places, but Paris remained a bucket list item. …until now! Do you remember when you truly realized that the world is wide and you’ve only experienced a speck of it? 🌎

For me, it was the eye-opening opportunity of a college study abroad program in amazing Sicily. I fell in love with Italy, and the experience made me realize that I wanted to prioritize traveling and living in different places when I became a β€œreal adult” (or in other words, when I graduated the following year). 

Getting to return to the charming town of Taormina nearly two decades later with my family was a dream. 

I returned to Sicily in a different phase of life: Older β€” I’ve almost doubled in age! Wiser. A mom. A wife. 

Yet, still wide-eyed, always up for an adventure, and filled with wonder at the beauty of this world. 

Different, but the same. 

Taormina is still stunning, bustling with more tourists and more fame than I remembered thanks to things like β€œWhite Lotus” and Dolce & Gabbana fashion shows (one was happening while we were in town). 

And so, I found Taormina herself to also be different, but the same β€” and definitely still a magical place ✨

Packed with fruit… but my kid calls it ice cream🍦We love breaking out our @yonanas gadget all summer long! 

My favorite way to make fruit soft serve πŸ‘‡πŸΌ

INGREDIENTS
1 sliced ripe banana, frozen
2/3 cup strawberries, frozen
favorite toppings: sprinkles, nuts, nut butter, etc

INSTRUCTIONS
Remove your fruit from the freezer. Allow it to thaw for about 10 minutes, until it starts to slightly soften.
Place the frozen fruit into the Yonanas maker, a handful at a time. I like to run about 1/2 the banana, then the strawberries, and then the rest of the banana through the machine straight into a bowl. I then use a spoon to swirl the fruit together, and immediately place the soft serve into cones if using.
Add in your favorite toppings and enjoy before it melts!
Serves 1 - scale up as desired!
