My hubby and I had a super low key New Year’s Eve night, which was totally fine with both of us. We ate and drank, played Scrabble, and enjoyed our Christmas decor and tree for one more night before I took it all down today. Since I had the time, I fooled around in the kitchen last night and came up with some yummy eats and drinks….
Today I’m sharing the recipes for homemade Old Bay potato chips and French onion dip. Both are easyyyy peezy to make, and so scrumptious to pick on while kicking ass in playing Scrabble. They don’t necessarily have to be paired together, but they make one delicious appetizer combo.
Homemade potato chips are so simple to put together. All you need is potatoes, vegetable oil and seasonings. My hubby was actually the one who had the bright idea to use Old Bay seasoning on the potato slices. Old Bay contains celery salt, red and black pepper, and paprika, and it adds great flavor to potatoes.
The star of the French onion dip is sweet onions:
I sautéed the onions until brown and tender, simmered them in vegetable broth, then combined them with light sour cream, and voila!
Old Bay Potato Chips
Ingredients
- 2 large Russet potatoes
- 2 TBSP vegetable oil
- 1/2 TSP Old Bay seasoning plus more for additional sprinkling
- 1/2 TSP salt
- 1/4 TSP black pepper
Instructions
- Preheat oven to 375. Wash the potatoes, then thinly slice them. Place in a large bowl.
- Drizzle vegetable oil on top and season with Old Bay, salt and pepper. Toss to combine well.
- Spread potato slices on 2 large baking sheets. Bake for 10-12 minutes. Remove from oven, flip slices over, sprinkle with additional Old Bay seasoning, and return back to oven. Cook until crispy, about another 10 minutes.
- Remove from oven and use a spatula to place chips on a serving platter.
- 1 cup thinly sliced sweet onion (about 2 small onions)
- 2 TBSP vegetable oil
- 1 cup vegetable broth
- 1-16 oz container of light sour cream
- 1/4 TSP of each pepper and salt, plus more to taste
- Heat oil in a large saute pan over medium heat. Add onions, and saute until brown and tender.
- Add the vegetable broth to the pan. Bring to a boil, then place the lid on top and allow the mixture to simmer until broth is reduced to almost nothing. This should take around 10 minutes.
- Remove from heat and allow the onions to slightly cool.
- Mix well with sour cream and serve with potato chips.

Oh my goodness your pup…I die. So precious. I wish I had been able to stay home on NYE!! We went out but it wasn’t anything crazy, thank goodness. I am definitely an introvert at heart 🙂 I’ve never made homemade potato chips but this looks so easy! Might have to try it!

Your NYE looks pretty similar to mine but I didn’t cook at all. You put together some deliciousness though. The dip and the brownies look amazing!
