Fresh & Easy Meal Idea: Mediterranean Veggie Wraps

Although I thoroughly enjoy spending time playing around in the kitchen, there are certainly plenty of days when I just want to quickly make a nutritious and yummy meal — get in the kitchen, and get out of there! This kind of instance happened a few days ago. In deciding what to whip up, I first started off with my favorite wraps: La Tortilla Factory’s Smart & Delicious Tortillas. I’ve been buying them for awhile now, but I just noticed a “Made Local” sticker on them for the first time. Sweet! Wraps-1

I had a bunch of fresh veggies and crumbled feta cheese on hand, so I had the idea to make Mediterranean-style wraps. This meal took 15 minutes tops to put together, and will now probably be on my list of go-to easy, healthy dinner ideas in a jiffy. Wraps-2

Mediterranean Wraps

Prep Time 10 minutes mins
Cook Time 5 minutes mins
Total Time 15 minutes mins
Servings 4

Ingredients
  

  • 2 cups green beans
  • 1 bell pepper
  • 2 vine ripe tomatoes
  • 4 oz crumbled feta cheese with Mediterranean herbs
  • 4 handfuls of arugula
  • 1 cup marinated artichoke hearts
  • 2 TBSP horseradish mustard
  • 4 whole wheat tortillas
  • [Mixed up] salt & pepper

Instructions
 

  • Trim and chop green beans and bell pepper. Place in a steamer basket, and boil in a medium pot containing a small amount of water. Let cook until tender, 5-7 minutes.
  • Meanwhile, chop tomatoes and artichoke hearts into small pieces.
  • Evenly distribute artichoke hearts, tomatoes, and feta cheese onto the 4 tortillas.
  • Once green beans pepper are done cooking, add some of those veggies to each wrap.
  • Top with a handful of arugula and spread 1/2 TBSP of mustard onto each wrap. Sprinkle with salt and pepper, roll up and enjoy!

Everything-but-the-kitchen-sink salads and pasta with broccoli are always on my meal idea back burner. Lately I’ve also been using these wraps to make veggie quesadillas.

    Oh that wrap looks so good! Pasta is a go to for me for dinner because it’s quick and easy. I also love making healthy Mexican food. I’m terrible at lunch ideas though!

    Whenever I’m starving, the first thing I think to make is a peanut butter and jelly sandwich. Might be lacking the fresh quality with no whole vegetables or fruits, but it sure is easy!

      Nothing wrong with a good PB&J! I’m a PB & banana sandwich fan myself. Anytime we’ve gone to the beach lately I bring one for lunch!

      Ah yes, I saw your delish looking tempeh sandwich the other day! I should start cooking with tempeh. I never see it in the stores I shop in though – will have to keep my eye out for it!

    Wrap looks good! I tend to make a grilled cheese with a salad on a weekly basis when I come home exhausted and want something in my belly right away.

      Thanks! Grilled cheese is one of my favorites too. I love it with cheddar + sliced avocado and tomato!

Packed with fruit… but my kid calls it ice cream🍦We love breaking out our @yonanas gadget all summer long! 

My favorite way to make fruit soft serve 👇🏼

INGREDIENTS
1 sliced ripe banana, frozen
2/3 cup strawberries, frozen
favorite toppings: sprinkles, nuts, nut butter, etc

INSTRUCTIONS
Remove your fruit from the freezer. Allow it to thaw for about 10 minutes, until it starts to slightly soften.
Place the frozen fruit into the Yonanas maker, a handful at a time. I like to run about 1/2 the banana, then the strawberries, and then the rest of the banana through the machine straight into a bowl. I then use a spoon to swirl the fruit together, and immediately place the soft serve into cones if using.
Add in your favorite toppings and enjoy before it melts!
Serves 1 - scale up as desired!

School’s out for my little girl ☀️& here are 4️⃣ screen-free tools that I’m using to keep my 6 year old busy and learning when we’re home this summer: 

1️⃣ @mondaymandala’s awesome array of free digital printables on just about anything you can think of 🖍️

2️⃣ @youngwildandfriedman’s amazing sensory kits that are high-quality and last forever. I have purchased a serious amount of these play dough and sensory sand kits over the years & they are worth every penny! My kiddo will spend hours setting up all of the little trinkets and building little play dough towns.

3️⃣ @Canva’s printable educational worksheets ✏️ For instance, I printed out money worksheets & am planning on doing a money lesson that includes us emptying out her piggy bank to delve deeper into currency & paying for something she wants at the store with her own 💵

4️⃣ A @brain_quest workbook — I bought one last summer as well & we love incorporating it into little lessons at home!
