Dark Chocolate Peanut Butter Oatmeal Granola Bars

Ingredients
  

  • 2 cup old fashioned oats
  • 1/2 cup whole wheat flour
  • 1/2 cup smooth peanut butter
  • 1/4 cup unsweetened almond milk
  • 1/2 cup light brown sugar
  • 1/3 cup honey
  • 2 TBSP ground flaxseed meal
  • 6 TBSP water
  • 1 cup dried cherries
  • 1/2 cup slivered almonds
  • 1/2 cup dark chocolate chips
  • 2 TBSP safflower oil
  • 2 TSP vanilla extract
  • 1 TSP cinnamon
  • 1/2 TSP baking powder
  • 1/8 TSP salt

Instructions
 

  • Preheat oven to 400.
  • Make flax eggs by combining the flaxseed meal and water in a small bowl, then let it sit.
  • In a large bowl, use an electric mixer to combine the peanut butter, brown sugar and honey.
  • Mix in the oil, vanilla extract, and flax eggs, and beat until smooth.
  • Add in the flour, baking powder, salt, and cinnamon, and mix together well with a spatula.
  • Mix in the oats, cherries, almonds, and chocolate chips and stir well.
  • Pour the batter into a 9x13 baking pan coated with baking spray. Bake until lightly browed, around 20 minutes.
  • Let them cool completely before cutting into 18 bars.
