Preheat oven to 375.
Place the pie crust on a large baking sheet.
Thinly slice the tomatoes, then arrange evenly around the bottom of the crust.
Evenly sprinkle the goat cheese over the tomatoes.
In a medium bowl, combine the milk and eggs. Whisk to combine well, then pour into crust.
Season with salt and pepper.
Bake until lightly browned, 35-45 minutes.
Allow to slightly cool, then cut into 8 slices.
