Fennel & Endive Salad with Almonds -n- Cherries

- 1 large fennel bulb chopped
- 2 small endives chopped
- 2 oz shredded carrots
- 1/4 cup dried cherries
- 2 TBSP slivered almonds toasted
- 1/2 TBSP olive oil
- 1 TSP fresh lemon juice
- 1 TSP balsamic vinegar
- 1/4 TSP sea salt
Combine first 4 ingredients in a bowl.
Whisk together olive oil, lemon juice, balsamic, and 1/8 TSP sea salt.
Pour dressing over salad.
Sprinkle remaining sea salt on top.
