Preheat oven to 375. Wash the potatoes, then thinly slice them. Place in a large bowl.
Drizzle vegetable oil on top and season with Old Bay, salt and pepper. Toss to combine well.
Spread potato slices on 2 large baking sheets. Bake for 10-12 minutes. Remove from oven, flip slices over, sprinkle with additional Old Bay seasoning, and return back to oven. Cook until crispy, about another 10 minutes.
Remove from oven and use a spatula to place chips on a serving platter.
