2large ripe bananasmashed (I like to leave some chunks in there)
2/3cupbrown sugar
3TBSPcinnamon
1/2cupalmond milk
1/4cupcanola oil*
1/4cupcoconut oilmelted*
1/2cupdark chocolate chipsoptional
2TSPvanilla extract
1/2TSPbaking powder
1/2TSPbaking soda
1/2TSPsalt
Instructions
Preheat oven to 350 degrees.
Combine the flour, cinnamon, baking powder, baking soda, and salt in a bowl.
In another bowl, mix together the mashed banana, light brown sugar, almond milk, vanilla extract, and coconut and canola oils.
Add the wet mixture to do the mixture and combine well with a wooden spoon. Mix in the chocolate chips.
Coat 2 large baking sheets with cooking spray. Place spoonfuls of batter onto the baking sheets, leaving adequate room apart from one another to expand when baking - making about 32 cookies.
Bake for 10 minutes, or until the bottoms are lightly browned.
Allow to slightly cool, and enjoy!
Notes
*Feel free to use all canola or coconut oil (1/2 cup) - I just prefer to use both because I don't love my baked goods with a coconut taste.*
