Combine the pancake mix, almond milk and cinnamon. Pour onto on a pancake griddle coated with baking spray and heated to medium low heat, forming 3 pancakes. Cook until lightly browned on each side.
Meanwhile, place the chopped walnuts in a small saucepan over medium heat. Dry roast for 3 minutes, then add in maple syrup, chopped apple, pumpkin pie spice and vanilla. Cook until apples are warm and gooey and the mixture is bubbly, stirring often. Add in dried cherries.
Place the cooked pancakes on a plate, and top with the apple syrup mixture. Enjoy them while they're warm!
