Combine all ingredients except the chocolate chips in a food processor. Pulse until a thick dough-like mixture forms.
Scrape down the sides of the food processor, then add in the mini chocolate chips. Pulse again for about 10 seconds.
Remove the dough for the processor, rolling the batter into 12 bite-sized balls.
