Preheat oven to 350 degrees. Arrange apple slices in a pie pan.
Warm the vanilla, lemon juice, 2 TBSP of the maple syrup, and 1 TSP of the cinnamon in a small saucepan, stirring to combine. Pour the mixture over the apples.
Place the oats, almonds, almond meal, salt and remaining 1 TSP of cinnamon in the same saucepan to dry roast for 5 minutes, tossing a few times. Transfer to a bowl.
Heat the coconut oil, remaining maple syrup and almond butter in the same saucepan over medium low until smooth and combined well. Pour the mixture over the oats and stir with a wooden spoon.
Crumble the oat topping over the apples. Cover with foil and bake for 20 minutes.
Remove the foil and bake for about another 10 minutes, or until the crumble looks golden brown and the apples are tender.
