Chocolate Chip Sea Salt Almond Butter Stuffed Dates {vegan + gf}

Ingredients
  

  • 12 pitted Medjool dates
  • 3 TBSP creamy almond butter you want it to be wet and drippy, not the bottom of the jar kind of dry
  • 2 TBSP shredded coconut
  • 1 TBSP mini chocolate chips
  • 1 TSP coconut oil melted
  • 1/8 TSP sea salt

Instructions
 

  • Use a small paring knife to create a hole on one side of each date, wiggling the knife around inside the fruit to create some space to stuff the dates. You can also slice the dates in half lengthwise, then sandwich them back together after you fill them if you choose.
  • In a small bowl, stir together the almond butter, mini chocolate chips and sea salt until evenly combined.
  • Use the paring knife to spread some of the almond butter mixture into each date, gently sandwiching it towards the middle of the dates.
  • Next, lightly brush each date with the melted coconut oil. Place the shredded coconut on a small plate, and roll each date in it, pressing the coconut into the dates to get some to stick.
  • Keep the stuffed dates covered in a plate or bowl to enjoy as a healthy snack or dessert whenever your sweet tooth strikes!
