Peppermint Matcha Hot Chocolate {vegan}

Ingredients
  

  • 1 cup unsweetened almond milk
  • 2 TBSP cocoa powder
  • 1/2-1 TSP matcha green tea powder depending on how strong you like your matcha flavor
  • 1 TBSP pure maple syrup
  • 1-2 g packet of pure stevia sweetener
  • 1/4 TSP peppermint extract
  • Pinch of salt
  • Vegan marshmallows for topping such as Dandie's, optional

Instructions
 

  • Place the almond milk in a small saucepan over medium low heat.
  • Whisk in the cocoa powder, matcha, peppermint extra, salt, maple syrup and stevia. Constantly whisk until the mixture is smooth and starts to bubble.
  • Pour the hot cocoa in a mug and top with marshmallows if you choose.
