Preheat oven to 350 degrees. Coat a large baking sheet with cooking spray.
In a mixing bowl, combine oats, flour, hemp hearts, flaxseed, walnuts, cinnamon, salt and baking powder.
In another bowl, whisk together the mashed banana, honey, apple sauce, melted coconut oil and vanilla extract.
Pour the wet ingredients into the dry ingredient bowl and mix to combine. Fold in the chopped apple and evenly incorporate into the batter.
Spoon the batter onto the baking sheet, forming around 35 cookies. Use the back of a spatula or your hands to flatten the cookies out a bit.
Bake for 9-11 minutes or until the bottom of the cookies are lightly browned.
Allow to slightly cool before transferring to a cooling rack to finish cooling down.
