Apple Oatmeal Lactation Breakfast Cookies

Ingredients
  

  • 3 cups dry oats I use old fashioned
  • 1 cup whole wheat flour
  • 3 TBSP hemp hearts
  • 3 TBSP ground flaxseed meal
  • 2 cups apples peeled and diced (2 smallish apples)
  • 1 banana mashed
  • 1/2 cup honey
  • 1/3 cup walnuts chopped
  • 1/3 cup unsweetened apple sauce
  • 1/4 cup coconut oil melted
  • 2 TSP vanilla extract
  • 1 1/2 TSP cinnamon
  • 1 TSP baking powder
  • 1/4 TSP salt

Instructions
 

  • Preheat oven to 350 degrees. Coat a large baking sheet with cooking spray.
  • In a mixing bowl, combine oats, flour, hemp hearts, flaxseed, walnuts, cinnamon, salt and baking powder.
  • In another bowl, whisk together the mashed banana, honey, apple sauce, melted coconut oil and vanilla extract.
  • Pour the wet ingredients into the dry ingredient bowl and mix to combine. Fold in the chopped apple and evenly incorporate into the batter.
  • Spoon the batter onto the baking sheet, forming around 35 cookies. Use the back of a spatula or your hands to flatten the cookies out a bit.
  • Bake for 9-11 minutes or until the bottom of the cookies are lightly browned.
  • Allow to slightly cool before transferring to a cooling rack to finish cooling down.
  • Enjoy! Store cookies in an airtight container in the fridge.
