Chocolate Cashew Butter Fruit Dip {vegan}

Made with just 6 ingredients, this chocolate cashew butter fruit dip is the perfect easy dessert for Valentine's Day, the Super Bowl, or really, any night of any week!

Ingredients
  

  • 1 cup roasted & salted cashews
  • 1/4 cup pure maple syrup
  • 1/4 cup almond milk
  • 1/4 cup chopped dark chocolate plus more for sprinkling on top of dip
  • 2 TSP coconut oil melted
  • 2 TBSP cocoa powder

Instructions
 

  • First, make the cashew butter by placing the cashews in a high-powered food processor. Process until the cashews turn into chopped little pieces.
  • Add in the melted coconut oil and scrape the cashews down from the sides of the processor. Process again until the cashews form a smooth, cashew buttery consistency. This will take a few minutes.
  • Add in the maple syrup, cocoa powder, almond milk and chopped chocolate. Process until evenly combined.
  • Pour the dip into a bowl, sprinkle extra dark chocolate on top, and enjoy it with fresh fruit. (This dip also is a great smoothie or pancake topper!)

Notes

If you refrigerate your leftover dip, it will harden up. Just pop it in the microwave for a few seconds and it will soften back up.
