Let me start off this post on a totally random note. Yesterday at the dog park, I got peed on...yeaaaaahhh. A dog just walked up to me, lifted his leg, and started peeing on my leg and foot. Hmm, what? Has this happened to anyone out there? Was he marking me as his territory? All I know is that it was definitely my strange moment of the day! Moving onto a more pleasant subject, on the menu for dinner tonight were these bad boys: What some people refer to as vegetarian crab cakes - zucchini cakes! This recipe from The Vegan Table is pretty simple and quick. I served mine with light sour cream and cocktail sauce. Zucchini Cakes Serves 4 What you need: 4 medium zucchini (mine measured out to 5 cups grated) 2 TBSP (dairy free) butter, melted 1 c seasoned ... [Read More]

Couscous Zucchini Bake
Happy Wednesday! Guess what finally came in the mail today? The present I got myself after 4 months of Adam being deployed! This gets me psyched for football season to start back up... Being that I leave the beginning of next week to spend time on the East coast with my family and girlfriends, I'm starting to get into that weird phase where I'm running out of staples in my kitchen and want to eat up all my perishable foods so I don't have to toss them. Last night's dinner combined some things that fall into that category - zucchini, tomato, shredded cheese, roasted pepper - with couscous to make a baked dish for 1. Couscous Zucchini Bake 1 cup of whole wheat couscous 1 large zucchini 1/4 c light shredded mozzarella 1 TBSP grated Pecorino Romano cheese 1 ... [Read More]
Veggie, Goat Cheese & Arugula Pesto Pizza
Today I ate breakfast early due to a conference call first thing this AM. Because of this, I found my stomach growling around 11 AM for lunch. I had pizza on my brain... and not just any pizza, leftovers from a new pizza recipe I came up with last weekend! Instead of using tomato sauce as I usually do, I came up with a healthy pesto to spread onto the dough. Though I'm a big cheese lover, I let veggies take the center stage with this tasty pizza. Veggie, Goat Cheese & Arugula Pesto Pizza Makes 8 slices Ingredients: 1 ready to bake whole wheat pizza dough (I use Trader Joe's) 2 c arugula 1/4 c fresh basil juice from 1/2 lemon 2 TBSP olive oil 3 oz goat cheese 1 c zucchini, sliced 1/2 c cherry tomatoes, sliced 1/2 c purple cabbage, shredded 2 ... Creamy Rotini with Zucchini & Cherry Tomatoes

I haven't killed it yet!] Goat Cheese Rotini with Zucchini & Cherry Tomatoes Ingredients: 2 oz Rotini or other pasta 1/2 c zucchini, diced 1/2 c cherry tomatoes, diced 1 oz Chevrion goat cheese 1 TSP olive oil around 3 sprigs of fresh basil, plus more for garnish a few TBSPs of water or cooking wine for sautéing salt & pepper Cook pasta according to directions. Zucchini ”Pasta” & Chocolate Peanut Butter Cups
[Blog Update: I've created a Foodie Meets Fitness Twitter account. There's now a "Follow me" button on the sidebar here! Also, I just updated my recipe page.] Earlier, I had a pretty good headache. It probably had something to do with my day's happenings: after a night of tossing and turning, my super early wake-up call from my bank notifying me of fraudulent activity on my account once again (thanks, asshole!), concentrating a little too hard at my laptop screen and confusing the heck out of myself working on a project, and getting my taxes done this afternoon (woohoo, check that off my to-do list!). The solution to get my head feeling better and to kick off my 3-day weekend right? Firstly, forgoing the gym to instead go for an hour hike with Harley at the park. The fresh air felt ... [Read More]
