Some days I'd love nothing more then to experiment in the kitchen for hours. Other days, I'm not in the mood for playing around when it comes to my eats. The latter was the case over Labor Day weekend. The entire three days, I just wanted to make some yummy food in as short amount of time as possible. Tofu Breakfast Tacos
Another weekend has flown by, and Monday came oh so quickly. As I've mentioned before, I telecommute for my job, and working from home has its perks: Sometimes I work in my pajamas. As a matter of fact, if I have a conference call at 8 am or earlier, it's an almost guarantee that I will not be dressed yet. I also get to work with my dog sleeping at my feet under my desk the majority of the time, which is pretty sweet. I'm lucky enough to have a pretty flexible schedule. If I need a breather or am having writer's block, I can go for a walk with my pup or take a workout break. And since my kitchen is just down the stairs from my office, I make pretty much all of my meals. I love being able to make my own food and taking a few moments to play around with recipes. Hello, hello! Here's a little tidbit about me: I love to read hard copies of things, and I get tons of magazines delivered to my house. I know that I can read things online, but there's just something nice to me about having a real magazine (or book) in hand and getting away from technology. My favorite places to read are at the gym while I'm cycling or doing the stair master (because it makes the time go by fast!) or while I'm relaxing at the beach. Roasted-Vegetable Soup with Sun-Dried Tomato Pesto
Last weekend was rainy, chilly, and low key - the perfect scenario to try making a new soup. My hubby recently gave me the Williams-Sonoma Soup cookbook, and I was itching to make a recipe from it. This is what I wound up making: The pesto adds a flavorful punch to this vitamin-packed soup. As usual, I altered the ingredient list a bit based on personal preference - i.e. I'm allergic to eggplant so I obviously nixed that; I used vegetable broth instead of chicken; I didn't have the leeks on hand that it called for.
