Today was no doubt a busy day - one where I had every task and activity timed out in order to fit everything in that I wanted to do. This doesn't always work out perfectly, like today when my physical therapy session went later than usual and I didn't make it to volunteer at the Humane Society, but I still like to crunch my timing on most days to be as productive as I can. Asian Sesame Broccoli Slaw Salad
Out of all the nutrient-rich vegetables out there, broccoli is one of the best. The super food is high in vitamins and antioxidants, including Vitamin A & C, fiber, folic acid, potassium and calcium. My lunch concoction today revolved around broccoli slaw, which is a combo of shredded broccoli, carrots & red cabbage. Sesame was the other major component of the salad. I used both roasted sesame seeds and sesame oil to give the dish a nice strong sesame flavor. I love sesame! A bag of broccoli slaw caught my eye recently while food shopping, and I nabbed it with memories of a salad I've had in mine. Not surprisingly, the rankings show that the states where people are eating their fruits and veggies have among the lowest rates of obesity. My current state of residency, California, ranks among the highest in fruit and veggie consumption. The study also found that states where people report engaging in the most physical activity also have the lowest obesity rankings. Cali is also listed as one of the highest in this category. However, the article notes that only about 1 in 4 adults in these top-ranked states are eating five daily servings of fruits and vegetables. Happy Hump Day! This evening I volunteered at the Humane Society and got to play with puppies like this cutie: Because I had a full day of work to do and knew I wanted to make it to volunteering, I squeezed in a workout at home today. I've been wanting to try a barre workout, and I keep seeing The Barre Method studios popping up around here, but I just haven't made it to a class yet. Today I tried a Ballet Boot Camp Challenge workout I found in Prevention magazine. The article claims the workout is so effective because: "It strengthens your deepest belly muscles, pulling in your waist like a corset, while lifting your butt, trimming your thighs, and toning your arms.
