Plum Tomato & Goat Cheese Quiche

I love to experiment in the kitchen, but sometimes life gets just too hectic to spend a lot of time playing around creating meals. This was certainly the case the past couple of weeks with preparing to move, and now, getting all unpacked. When you're not sure where your plates are or have to go digging through boxes to find a knife to work with, meals tend to be pretty simple. That's why lately my dinners have included some quick, staple meals - including brown rice with veggie quesadillas, salad with pasta, and grilled cheese  & homemade sweet potato fries. Irish Soda Bread & Sauteed Rosemary Potatoes

Happy Monday! It's crazy how fast the weekend - our last one living in San Diego - flew by. I had planned on getting a lot of packing done, and while I did make some progress, have tons to do this week for our move up to northern California. I wanted to enjoy my last weekend here, so things like the beach, hiking, and meeting up with my parents' friends who are in town took up a lot of my time. But I had a lot of fun this weekend, and think it was worth the tradeoff for my probable hours of midnight bubble wrapping this week. Chickpea & Brown Rice Salad

Hi there! I spent a couple of hours this evening volunteering at the Humane Society, and got to play with some pretty adorable dogs. Getting good pictures of puppies is a nearly impossible task: Such sweet little puppies! Moving onto food, today I'm sharing all of my eats for the day: My breakfast today was packed with a ton of vitamins and nutrients: I'm keeping up with my green juice a day! Spaghetti with Asparagus in a {Lightened Up} Cream Sauce

Hi there! It's been a beautiful day here in San Diego - 85 and the sun shining bright! The beach was a great people watching scene today. I was bikini clad for the first time in quite awhile, soaking up the sun, relaxing, and reading for a couple of hours this afternoon. No complaints here! Today's recipe centers around one of the few veggies I never ate until recently - asparagus. My hubby is a fan of it, so I started giving it more of a try lately, and have found that as long as it's dressed up with a sauce or pasta, I don't mind it at all. Sun-Dried Tomato Risotto Balls

When I think back to my time studying abroad in Italy, a lot of mouthwatering food comes to mind - including rice balls. Though a lot of the time they contained ham or some other kind of meat, here and there I was able to find vegetarian ones. They were gooey, rich, and delicious, and I'm not sure that I've eaten them since my time in Sicily. That's why when I came across risotto cakes in my newest cookbook, Essential Vegetarian, I knew I had to try the recipe. Rice balls are typically deep fried. While they taste scrumptious, anything submerged in a bath of oil isn't exactly waistline friendly. That's why I tweaked the recipe and used less oil. Dark Chocolate Peanut Butter Oatmeal Granola Bars

Hi friends! This weekend has been a pretty rainy one in San Diego - not that I'm complaining, since it's still been in the 60s. I'll take that any day over 25 degrees and snowy! Besides taking Harley for long walks both yesterday and today and having a tennis workout earlier with my hubby, I've pretty much been indoors the rest of the time. Rainy weekend activities have included checking out the bookstore, where I picked up a new cookbook on sale.... ...cleaning, and seeing Zero Dark Thirty at the movies last night. We’ll be kicking off our week of family birthdays with my wonderful husband turning the big 4-0! 

Something that intrigued me about Adam when I met him 20 years ago was that he seemed serious & quiet, but then would unexpectedly say something super witty or do something silly that cracked me up… & his serious-with-a-side-of-goofball personality remains true to this day (case in point: this video montage 😂)

After all, they say to marry the one who makes you laugh — and I, for one, highly recommend it❣️ Here’s to hoping the next 40 years are full of many more amazing adventures & accomplishments!

Our favorite parts: 
⭐️ Sultanahmet Square’s interesting historic sites, including the German Fountain & the Egyptian Obelisk 
⭐️ Visiting the beautiful Blue Mosque
⭐️ Exploring the historic district and trying the street food (Why is the ice cream so.. sticky?!🍦) 
⭐️ Venturing through the hectic Grand Bazaar 
⭐️ A delicious dinner @amedroscafe 
⭐️ Making friends with stray cats.. so many friendly cats! 🐈 As a huge animal lover, I adore that the city seems to take good care of its strays.. This is the first place I’ve ever been where they have vending machines to buy food for stray animals!

When I was newly pregnant with Camryn before we knew her gender, I had a vivid dream that I was picnicking with a little blonde girl in front of the Eiffel Tower. I woke up and told my husband, “Guess what? We’re having a girl!”

We got Camryn a passport at 5 months old with the idea that we’d visit Paris later that year and turn my literal dream into a reality. But then, COVID hit a few weeks later.

By the time we’d be comfortable traveling to Europe, we instead were selling our house in New England and traveling around the U.S. full-time.

We had adventures in plenty of other amazing places, but Paris remained a bucket list item.

…until now! Our picnic in Paris as a family of three may have happened a few years later than planned, but it was a bucket list item that was exactly how I’d pictured, perhaps even better.

It was such a magical evening staring at the Eiffel Tower, sipping champagne, and noshing on local food that we’d nabbed at shops around town ✨🥂

Do you remember when you truly realized that the world is wide and you’ve only experienced a speck of it? 🌎

For me, it was the eye-opening opportunity of a college study abroad program in amazing Sicily. I fell in love with Italy, and the experience made me realize that I wanted to prioritize traveling and living in different places when I became a “real adult” (or in other words, when I graduated the following year). 

Getting to return to the charming town of Taormina nearly two decades later with my family was a dream. 

I returned to Sicily in a different phase of life: Older — I’ve almost doubled in age! Wiser. A mom. A wife. 

Yet, still wide-eyed, always up for an adventure, and filled with wonder at the beauty of this world. 

Different, but the same. 

Taormina is still stunning, bustling with more tourists and more fame than I remembered thanks to things like “White Lotus” and Dolce & Gabbana fashion shows (one was happening while we were in town). 

And so, I found Taormina herself to also be different, but the same — and definitely still a magical place ✨
