Life Lately: Food, Fitness & Fun on the East Coast

My working vacation to my hometown has (not surprisingly) been a busy few weeks – lots of fun happening and catching up with loved ones! Here’s what life lately has been for me on the east coast:

Food. There’s been no shortage of good eats this trip, obviously! Some food highlights have included this healthy blueberry crumble that my mom for me on my birthday morning (oh yea, I turned 29 the day that I arrived in Jersey!)…

…and lots of veggies as per usual. My grandpa’s garden produces some insanely big zucchini!

His tomato plants also produce some pretty awesome Jersey tomatoes. Bruschetta and tomato sauce with zoodles have been enjoyed!

Naturally, I’ve done some cooking for my family. One treat I made them was my healthier rice crispy treats. While my nephews weren’t sold on them, all of the adults loved em!

One dinner that I made at my parents’ house was the below pictured Mexican stuffed bell peppers with avocado sauce.

There’s also been some protein pancakes and smoothies in my life, as per usual… protein pancakes

…and I introduced my family to Halo Top, which they all loved.

One awesome dinner that I had out with my parents was this bomb pizza – because pizza must be eaten when in the northeast (California just doesn’t compare when it comes to Italian food.).

Called the “Patatini Bianco,” this bad boy had mozzarella, caramelized onion, and ricotta with crispy potatoes and truffle essence. So good!

I also simply had to make a stop to at my favorite childhood ice cream spot, Jersey Freeze, for a waffle cone of non-fat pistachio with chocolate sprinkles.

Fitness. On the workout front, I’ve mostly been fitting in workouts in my parents’ living room with lots of Jillian Michaels DVDs.

There have also been a couple of morning yoga sessions…

…though my parents’ dog thinks that the yoga mat gets rolled out just for her lounging:

One day last week I also did laps in my parents’ pool. Whew, their pool is much more of a lap pool than mine is, and it was a great cardio workout!

My swimming session had a Pitbull audience, with both my sister’s and parents’ dogs hanging out around the pool eagerly watching me.

I’ve been keeping them company while I work from my parents’ home. They’re giving me my puppy fill, though I miss my pup whose safe & sound in California!

They lick each other like crazy and lounge around together all day long!

I’ve been noticing how green everything is around Jersey compared to desert living in San Diego. 

Fun. There’s been no shortage of good times for me. My trip kicked off with a family birthday party at my parents’ shore house.

Kicking off my last year of my 20’s with both my hubby and family down the shore was great! I love a relaxing birthday celebration.

With my mom, nephew, hubby and dad

I’ve gotten to spend some time with my nephews, which is always nice. The aunt life = lots of reading books & doing puzzles! I now have 4 nephews + 2 nieces, and I’ve gotten to spend time with all but one new niece that lives in Virginia.

My family knows me too well, and got me lots of workout gear as birthday presents…

…so I think I’m set on exercise clothes for awhile!

With this summer heat, I fortunately have been able to be out on the water a good amount. I’ve been out on my parents’ boat in Jersey, and also went out on my father-in-law’s boat for a ride to Chesapeake, Maryland.

I love checking out the beautiful houses along the water, and happy hour on a boat is pretty fun too!

Little tidbit: My parents’ shore house is on a little island in Jersey called Barley Point. They actually met there when they were kids, so it’s a pretty special place to my family. My grandparents always had a house there, and after Hurricane Sandy hit the island pretty hard, my parents bought a demolished house there and built their beach house from scratch.Barley Point sunset-Aug 16

It’s a great place with lots of memories – and the view from their house is pretty awesome!

I also spent a day in Philly last weekend. My hubby was there all last week for the start of his MBA program at Temple U before he headed back to the west coast. I love the history  and architecture of the city!

I would have loved to do more in the city, but it was absolutely disgusting out so we were kind of limited with outdoor activities. It was still fun to see the city a bit though!

ladies nightI also went bridesmaids dress shopping with some of the ladies in my family and my soon to be sister-in-law. Afterwards, we went out for margaritas/sangria. I love girls’ nights and the excitement surrounding a family wedding!
stormy skies at Barley PointAll in all, it’s been a great couple of weeks! I’ve got some girlfriend time, a visit to my alma mater, and a weekend back at Barley Point with my family as my plans for my last few days in town.

    That all looks amazing! You’re making me miss home. Definitely impossible to get pizza out here like on the east coast. And bagels!

    Happy belated birthday! 29? You’re just a babe! 😉 It looks like you had an amazing time with your family. I love their choice in workout clothes for you too. Some of those shirts are hilarious!

    Also the view from your parents beach house is incredible. That’s so nice that they were able to breathe life back into an area that was devastated by Hurricane Sandy. <3

    Oh my gosh your photos are so gorgeous! It looks like you are having the most amazing time! I love the northeast in the summer. The greens and blues are amazing! Cooper thinks my yoga mat is for him too. If I try to workout while he is playing around me, he climbs on top of me or sits on my mat so I can’t move. Sometimes he lies down on it and plays with his trucks! Also, happy belated bday!

    What a fun post, Nicole! I have so many thoughts and comments…but I’ll try to limit them to just a couple! So that pizza…amazing! I love a good pizza with potatoes on top. Who would have thought they’re such a good pizza topping? Happy belated birthday! You’re a young ‘un at just 29…enjoy this year though! I hear that you become an adult at 30. 😉 And the boat. I love being out on the water, so those boat pics are great. I hope your trip is going well even though I’m sure you’re ready to get back home to Cali soon. Safe travels!!

    I love a good trip to the east coast!!! Looks like you literally did it ALL! And so wish I had a lap pool like that in my back yard – it would save so much time driving to the gym 🙂
    Love boating on the water – so relaxing and fun. Those mansions by the shore were stunning!!!
    Love the background of your parents shore house. That is truly romantic and just a great place for you all to come together.
    Looks like you had an amazing birthday! Enjoy your last year of 20 because it just keeps getting better!!

La Jolla is an ever popular area, but for good reason… It’s one of the most beautiful areas in San Diego ☀️ & my favorite time of year to visit is NOW when it’s Harbor Seals Pupping Season! 🦭

📍Casa Beach is closed off from humans from mid-December through mid-May for birthing & bonding, and most of the seal pups are born in February & March. They are so much fun to watch!

Last weekend we got to ride on the world’s largest rotating aerial tram car, the Palm Springs Aerial Tramway 🌴⛰️ Guests travel 6,000 feet up in just 10 minutes! 

Once we reached the top, we hiked a couple miles of trails in Mount San Jacinto State Park - where it was only 37 degrees and windy, brr! - and took in the beautiful views. 

Here are a few tips for optimizing a Palm Springs Aerial Tramway adventure: 

✨Show up early. We didn’t realize how big of a production this excursion would be, and when we arrived at 11 am, the wait time was 2 hours to ride the tramway. If I could do it over, I would show up at opening time. 

✨Bring breakfast. While they do have food options while you wait for your tram ride, it’s stereotypical not very healthy American food. Pick up food at a local cafe and bring it with you to enjoy outside. We love @palmgreenscafe!

✨ Bring extra clothes. The temperature at 8,500 ft elevation varies from 20-40 degrees colder, so make sure to pack a jacket, sweatshirt, hat, even gloves.

Who else is pumped for the Olympics to start?! 🇺🇸

This curling competition experiment is a hit with my kiddo! Here’s how to make it: 

You’ll need: 
✨A rimmed baking sheet
✨Aluminum foil 
✨Permanent markers (we used black + red) 
✨A variety of pebbles 
✨Optional: buttons, craft pom-poms and other objects to experiment playing with 

1️⃣ Spread foil across your baking sheet. Draw the starting line on 1 side and a small circle inside a large circle on the other side. 

2️⃣ Place your “rink” in the freezer, then fill it with water halfway up the sides. Chill until it’s totally frozen. 

3️⃣ Time to play! Each player picks 3 pebbles. Take turns using a finger to push your pebble towards the target. 

🥌 Pebbles that land in the inner circle = 3 points each 
🥌 Pebbles that land in the outer circle = 1 point each
🥌 3 rounds = 1 game 

❗️Players can hit other pebbles & knock them out of the circles, which is fun! 

❗️Once all players use their pebbles, that’s the end of round 1. Tally the scores as you go!

Welcome to my new series, Easy Plant-Based Meals, where I share simple, nutritious meals that I make for my family on the regular. 🥦🥕🥬🧅🧄🫘🫑
 
Today I’m making Garlic Pearled Couscous with Roasted Chickpeas & Veggies. 

Here are the ingredients you need to serve 4: 

1️⃣ 2-3 boxes of Near East Pearled Couscous with Roasted Garlic & Olive Oil (I find that 3 boxes yield about 4.5 cups; you can also use a plain pearled couscous)
2️⃣ 1 can garbanzo beans 
3️⃣ 4 TSP avocado oil 
4️⃣ 1 zucchini 
5️⃣ 1 bell pepper
6️⃣ 2T-1/4 cup pine nuts, optional but I like the added heart-healthy crunch
7️⃣ Salt, pepper & paprika to taste 

Directions:
1️⃣ Preheat oven to 375. Drain & rinse chickpeas, then add to a baking dish. Add 2 TSP of avocado oil, and a nice sprinkle of salt, pepper, and paprika to taste. Mix it up, then cook for 25 minutes, stirring halfway through. 

2️⃣ Cook the couscous according to the box directions. 

3️⃣ Heat 2 tsp avocado oil in a sauté pan over medium-low heat. Chop the zucchini and bell pepper, add a sprinkle of salt & pepper, then cook until tender. 

4️⃣ Lightly toast the pine nuts. 

5️⃣ Plate the couscous, add the roasted chickpeas & veggies on top, & sprinkles pine nuts onto each plate. Enjoy!

🌎 The largest National Park in the contiguous U.S. - 3.4 million acres! - did not disappoint 🔥 Here’s what we had on our agenda for Day 2️⃣ of exploring Death Valley National Park: 

📍Explore the Mesquite Flat Sand Dunes
🛷Go sledding down the dunes! 
🥾Hike Mosaic Canyon Trail ~ a 3.5-mile out & back trail with 974 ft elevation gain. This trail was so much fun & the rock formations are gorgeous! My daughter loved climbing & bouldering around. It features some cool slot canyons and difficult rock scrambling - our kinda speed! 
🚰 Refuel at Stovepipe Wells Village ~ Nearby pitstop within the park for gas, restrooms, a general store & restaurants
