7 Healthy Snacks & Desserts I’ve Been Eating Lately

Hi friends!

I hope that you had a wonderful weekend! I had a great 3 days out of town for ShiftCon, and then I came home to spend time with my little family. Highlights on Sunday were a relaxing few hours at the mostly empty beach…

Carlsbad Beach-Sept '15

…and making vegan s’mores via our fire pit under the Blood Moon:

s'mores-1

I’ve been wanting to make s’mores for months since finding these vegan marshmallows at my natural foods store, and even included it on my Before 30 Bucket List. Mmm, now I can check that one off the list!

S'mores Collage

I’m going to share some highlights about ShiftCon – a conference that puts the topics of wellness, health, and the environment front and center – in my next post, but today I want to chat with you guys about new snacks that I’ve tried lately. As of late I’ve been obsessed with both popcorn and cereal, so here are my recent favorites of those, plus a few other yummy snacks I’ve been noshing on!
ICONIC Vanilla Bean

ICONIC Protein Drinks. Recently ICONIC sent me their Cafe au Lait, Vanilla Bean & Chocolate Truffle flavored protein drinks to try. While I typically don’t go for milk or milk-based protein drinks, I was intrigued in trying ICONIC because their products come from grass-fed and hormone free cows and include organic fair-trade blue agave.

Naturally, I liked the chocolate flavor the best. It reminded me of these Special K protein shakes I used to drink as a teenager – only with a much healthier ingredient list, less calories and more protein. Each bottle contains 20 g of protein and 130 calories, making it an ideal easy snack post-workout when I want to fuel my recovering muscles with a nice dose of protein.

479 popcorn

479 Degrees Sea Salt Caramel Artisan Popcorn. [gluten free] Ooh baby baby, sweet and salty popcorn! I love the short and sweet ingredient list on this popcorn and the fact that it’s made with organic ingredients and rBST and antibiotic-free butter. At 100 calories a cup, this popcorn is a perfect sweet & salty snack.

Vans GF cereals

Van’s Cocoa Sensations & Blissful Berry Cereals. [gluten free, vegan] Recently Van’s sent me these boxes of their new gluten free cereal line flavors to try, and I’ve been snacking on them often. The cocoa cereal is obviously my favorite given my love for anything chocolate. I’ve been eating some with protein powder, blueberries/sliced banana and almond milk for breakfast, and noshing on it when I’m starving waiting for dinner to cook or just want a little something sweet at night.

Made with a blend of oat brown rice, millet, quinoa, and amaranth flours and sweetened with cane sugar, these cereals are a great alternative to the artificially dyed and corn syrup-filled cereals that you (and your kids) might normally eat.

Dried Bananas

Made in Nature Dried Bananas. [gluten free, vegan] Made in Nature, one of the vendors at ShiftCon, sent me a cute package with some of their products prior to the show, and their dried banana slices were definitely my favorite! Containing just organic banana and lemon juice, they make for a perfect healthy grab-and-go snack, and I have been adding a couple of them to my smoothie bowls.

Boomchickapop

Angie’s BOOMCHICKAPOP Caramel + Cheddar Popcorn Mix. [gluten free] Ever have a problem figuring out if you want sweet popcorn or cheesy popcorn? Well, Angie’s popcorn has solved the dilemma for you by creating this awesome mix of both caramel + cheddar popcorn. Also at 100 calories a cup, it’s “crunchycaramelcheesysexy” – as Angie’s calls it.

As you can tell from this picture, Harley loves it too. She’s also popcorn obsessed, and not so coincidentally acts very sweet and cuddly when I have a bowl of this deliciousness out!

365 PB Cocoa Balls

365 Peanut Butter & Cocoa Balls Cereal. [vegan] I randomly picked this cereal up while browsing around at Whole Foods, and quickly became obsessed with it. It’s awesome as a nighttime snack, or with banana to make it the beloved peanut butter + banana + chocolate flavor combo.

Big Bear snacks-2

Kashi Chocolate Chip Chia Crunchy Granola & Seed Bars. I’ve been stashing these Kashi bars in my bag and car as my go-to snack when I’m on-the-go. These bars provide the body with a fiber, omega-3 and whole grain-rich snack, and they’re delicious!

Tell me… What have you been snacking on lately? Which of these snacks have you tried?

Disclaimer: Some of these products were sent to me complimentary, but this is not a sponsored post, and as always, all opinions expressed are genuinely my own.

Harley’s photo bomb is so funny! She has good taste. 🙂
That protein drink sounds yummy and I love that it’s made with grass-fed milk.
I’m excited to hear more about ShiftCon too! It sounds like it was such a fun event!

I was at whole foods last night and had that 365 Peanut Butter & Cocoa Balls Cereal in my hands but then decided I wouldn’t have enough room in my suit case to get it back home with me, Since I am out of state for business right now.

Our Kroger is remodeling and getting rid of some brands in the organic section (which I’m sad about), BUT they are replacing them with new brands. I JUST noticed that Cadia brand in the organic crackers last night! I love graham crackers. I haven’t had the 479 popcorn, but I’ve had Ange’s Chicago mix and it’s good! They have a pumpkin spiced popcorn and candy corn popcorn out right now and the candy corn is to die for.
I looked for vegan marshmallows for so long b/c my nephew LOVES marshmellows and we all used to buy him bags and bags of them. When I finally read the ingredients, I told him we weren’t buying them for him anymore lol. I found one brand in WF the other day that claimed ‘vegan’, but they still had corn syrup in them! I haven’t seen this brand you found though…

[…] soon as I bought the vegan marshmallows, I started thinking about s’mores. I finally made s’mores over my fire pit last month, but then I wanted to take it a step further and make a s’mores cake. Even better? […]

📍The Living Desert Zoo in Palm Springs is such a charming place to spend an afternoon! At this conservation-focused zoo, we loved all of their animatronic displays & children’s play + learning spaces — and a highlight of the day was definitely getting to feed the giraffes! 🦒

La Jolla is an ever popular area, but for good reason… It’s one of the most beautiful areas in San Diego ☀️ & my favorite time of year to visit is NOW when it’s Harbor Seals Pupping Season! 🦭

📍Casa Beach is closed off from humans from mid-December through mid-May for birthing & bonding, and most of the seal pups are born in February & March. They are so much fun to watch!

Last weekend we got to ride on the world’s largest rotating aerial tram car, the Palm Springs Aerial Tramway 🌴⛰️ Guests travel 6,000 feet up in just 10 minutes!

Once we reached the top, we hiked a couple miles of trails in Mount San Jacinto State Park - where it was only 37 degrees and windy, brr! - and took in the beautiful views.

Here are a few tips for optimizing a Palm Springs Aerial Tramway adventure:

✨Show up early. We didn’t realize how big of a production this excursion would be, and when we arrived at 11 am, the wait time was 2 hours to ride the tramway. If I could do it over, I would show up at opening time.

✨Bring breakfast. While they do have food options while you wait for your tram ride, it’s stereotypical not very healthy American food. Pick up food at a local cafe and bring it with you to enjoy outside. We love @palmgreenscafe!

✨ Bring extra clothes. The temperature at 8,500 ft elevation varies from 20-40 degrees colder, so make sure to pack a jacket, sweatshirt, hat, even gloves.

Who else is pumped for the Olympics to start?! 🇺🇸

This curling competition experiment is a hit with my kiddo! Here’s how to make it:

You’ll need:
✨A rimmed baking sheet
✨Aluminum foil
✨Permanent markers (we used black + red)
✨A variety of pebbles
✨Optional: buttons, craft pom-poms and other objects to experiment playing with

1️⃣ Spread foil across your baking sheet. Draw the starting line on 1 side and a small circle inside a large circle on the other side.

2️⃣ Place your “rink” in the freezer, then fill it with water halfway up the sides. Chill until it’s totally frozen.

3️⃣ Time to play! Each player picks 3 pebbles. Take turns using a finger to push your pebble towards the target.

🥌 Pebbles that land in the inner circle = 3 points each
🥌 Pebbles that land in the outer circle = 1 point each
🥌 3 rounds = 1 game

❗️Players can hit other pebbles & knock them out of the circles, which is fun!

❗️Once all players use their pebbles, that’s the end of round 1. Tally the scores as you go!

✨Idea from @kiwico_inc’s Winter Wonders experiment book

Welcome to my new series, Easy Plant-Based Meals, where I share simple, nutritious meals that I make for my family on the regular. 🥦🥕🥬🧅🧄🫘🫑

Today I’m making Garlic Pearled Couscous with Roasted Chickpeas & Veggies.

Here are the ingredients you need to serve 4:

1️⃣ 2-3 boxes of Near East Pearled Couscous with Roasted Garlic & Olive Oil (I find that 3 boxes yield about 4.5 cups; you can also use a plain pearled couscous)
2️⃣ 1 can garbanzo beans
3️⃣ 4 TSP avocado oil
4️⃣ 1 zucchini
5️⃣ 1 bell pepper
6️⃣ 2T-1/4 cup pine nuts, optional but I like the added heart-healthy crunch
7️⃣ Salt, pepper & paprika to taste

Directions:
1️⃣ Preheat oven to 375. Drain & rinse chickpeas, then add to a baking dish. Add 2 TSP of avocado oil, and a nice sprinkle of salt, pepper, and paprika to taste. Mix it up, then cook for 25 minutes, stirring halfway through.

2️⃣ Cook the couscous according to the box directions.

3️⃣ Heat 2 tsp avocado oil in a sauté pan over medium-low heat. Chop the zucchini and bell pepper, add a sprinkle of salt & pepper, then cook until tender.

4️⃣ Lightly toast the pine nuts.

5️⃣ Plate the couscous, add the roasted chickpeas & veggies on top, & sprinkles pine nuts onto each plate. Enjoy!

🌎 The largest National Park in the contiguous U.S. - 3.4 million acres! - did not disappoint 🔥 Here’s what we had on our agenda for Day 2️⃣ of exploring Death Valley National Park:

📍Explore the Mesquite Flat Sand Dunes
🛷Go sledding down the dunes!
🥾Hike Mosaic Canyon Trail ~ a 3.5-mile out & back trail with 974 ft elevation gain. This trail was so much fun & the rock formations are gorgeous! My daughter loved climbing & bouldering around. It features some cool slot canyons and difficult rock scrambling - our kinda speed!
🚰 Refuel at Stovepipe Wells Village ~ Nearby pitstop within the park for gas, restrooms, a general store & restaurants
