My New Favorite Hiking Spot: Elfin Forest

Meet my new favorite place to go hiking:

When I moved back to San Diego County a few months ago, it was funny because although I was back in a general area that I had lived in before, I’m 45 minutes north from where I had lived prior. It has been like learning the ins and outs of a whole new place, although the area is familiar.

One of the first things I started searching for in my new area was new favorite hiking spots. After all, hiking is one of my favorite things to do. It’s not only a way that I get exercise and exercise my dog, it’s also a meditative practice for me. It’s a way that I process things and clear my head. Often, I start off a hike with a dilemma or just something that I’m contemplating, and by the time I get back in my car, I’ve resolved it.

Escondido’s Elfin Forest Recreational Reserve has become one of the areas that I frequently hike around, and it’s no doubt my favorite spot that I’ve found nearby thus far. I’ve gone with my hubby and brought my cousin hiking there once as well, but usually it’s just Harley girl and me hitting the trails.

Harley’s a pretty hilarious hiker. She gets super excited with every man, woman, child, and animal she sees. She runs around like a maniac. Sometimes she lays down in the shade to cool off for a second whenever she possibly can, but most often she’s a ball of energy. Seen below, she’s climbing up rocks to get to a piece of pizza crust that someone left behind.

Side note: Who eats pizza while they’re hiking?

It has become a ritual for hiking to be my workout of the day on mostly every Friday afternoon/evening. I find it to be a great way to kick off the weekend on a healthy and relaxing note.

The Elfin Forest Reserve is operated by a municipal water district, because the area has a huge dam and reservoir that services residents in the area, holding 8 BILLION gallons of water. The reservoir is no joke right?

Elfin Forest has lots of different hikes to choose from, but to get to any of them, you first hike up the Way Up Trail (about 1.5 miles of hiking). After you get to the height of that and are in sight of the dam, there are a bunch of different ways that you can hike. Some of them are short trails that link up to other short trails, and others are longer ones. For instance, there’s an Equine Incline Loop Trail that’s 2.6 miles around. I honestly don’t pay too much attention to the signs, and usually just hike around in whatever direction I feel like, or whichever way Harley ventures to if she’s running around in front of me.

Speaking of Harley running around loose, the park allows dogs off the leash during the week once you get up towards the top of the Way Up Trail….

Whether Harley is under “effective voice control” as specified is quite debatable – she’s more under selective hearing voice control – but I always let her off the leash to run free. She’s pretty good with staying close to me without me saying much at all, unless there’s another dog, in which case she totally disregards me and does what she wants. What can I say, she has a mind of her own!

In all honesty, if we’re hiking somewhere and there aren’t a lot of people around, I let Harley off her leash regardless if it’s allowed or not, but it’s nice that the park officially gives your permission to do so. She’s a curious, energetic pup – she likes to run, then stop, then explore and sniff, then lay down for a sec, then turn around and see how close I am, then sprint again – and it’s a lot easier to hike without having her on a leash.

The park has a bunch of picnic areas and overlook spots, which I’m a fan of. It gives us space to take a water break and chill out for a moment while taking in the scenery.

The other night Harley and I went for an evening hike. The weather was perfect, there were only a handful of people on the trails, and the atmosphere was just so calm.

Because I was enjoying myself so much, we hiked a little longer than planned. When we were about 15 minutes from getting back to my car, horns started blaring and the ranger got on a megaphone speaker to warn hikers that the park was about to close and our cars would be towed if not moved in time. We got back just in time to scoot out of there before sunset. So, a word to anyone whose planning on hiking there, make sure that you plan your route accordingly. That would not be fun to come back from a relaxing workout to an empty parking lot wondering where your car went!

I know that I’ll be visiting Elfin Forest many, many more times. I’ve probably said it a million times, but hiking is definitely my favorite outdoor workout!

PS – Harley usually refuses to look at my phone when I try to take a picture, so my hiking puppy selfies usually turn out like this…. 🙂

    I love love loveeeee hiking but we just aren’t endowed with as many amazing hiking trails as SD is! Trying to find some good ones though and I’ve been pleasantly surprised. Now I just need to find a dog to join me 🙂

      Hiking is even better with a pup for sure… But it’s fabulous regardless! I actually really got into hiking only after I got Harley. I find that a lot of the hiking places I’ve enjoyed most are hidden gems, so that doesn’t surprise me that there’s more by you than you originally knew of.

    I love hiking too, but there aren’t many NICE places around here like THAT! Judging by the views, I can see why you love it there and go at least once a week! I need a dog-workout buddy too. 🙁

    My favorite outdoor workout is playing tennis… but if I lived near this hike, hiking would probably be my favorite I think! Harley is so cute!

    Harley looks like she’s in heaven, hiking with her mama! 🙂 Coco is the same way- completely selective hearing. We let her off the leash but if there’s a cliff close by, then we don’t risk it.

    I’m glad you’re finding so many great new places to hike in San Diego! You’re making me crave one soon!

La Jolla is an ever popular area, but for good reason… It’s one of the most beautiful areas in San Diego ☀️ & my favorite time of year to visit is NOW when it’s Harbor Seals Pupping Season! 🦭

📍Casa Beach is closed off from humans from mid-December through mid-May for birthing & bonding, and most of the seal pups are born in February & March. They are so much fun to watch!

Last weekend we got to ride on the world’s largest rotating aerial tram car, the Palm Springs Aerial Tramway 🌴⛰️ Guests travel 6,000 feet up in just 10 minutes! 

Once we reached the top, we hiked a couple miles of trails in Mount San Jacinto State Park - where it was only 37 degrees and windy, brr! - and took in the beautiful views. 

Here are a few tips for optimizing a Palm Springs Aerial Tramway adventure: 

✨Show up early. We didn’t realize how big of a production this excursion would be, and when we arrived at 11 am, the wait time was 2 hours to ride the tramway. If I could do it over, I would show up at opening time. 

✨Bring breakfast. While they do have food options while you wait for your tram ride, it’s stereotypical not very healthy American food. Pick up food at a local cafe and bring it with you to enjoy outside. We love @palmgreenscafe!

✨ Bring extra clothes. The temperature at 8,500 ft elevation varies from 20-40 degrees colder, so make sure to pack a jacket, sweatshirt, hat, even gloves.

Who else is pumped for the Olympics to start?! 🇺🇸

This curling competition experiment is a hit with my kiddo! Here’s how to make it: 

You’ll need: 
✨A rimmed baking sheet
✨Aluminum foil 
✨Permanent markers (we used black + red) 
✨A variety of pebbles 
✨Optional: buttons, craft pom-poms and other objects to experiment playing with 

1️⃣ Spread foil across your baking sheet. Draw the starting line on 1 side and a small circle inside a large circle on the other side. 

2️⃣ Place your “rink” in the freezer, then fill it with water halfway up the sides. Chill until it’s totally frozen. 

3️⃣ Time to play! Each player picks 3 pebbles. Take turns using a finger to push your pebble towards the target. 

🥌 Pebbles that land in the inner circle = 3 points each 
🥌 Pebbles that land in the outer circle = 1 point each
🥌 3 rounds = 1 game 

❗️Players can hit other pebbles & knock them out of the circles, which is fun! 

❗️Once all players use their pebbles, that’s the end of round 1. Tally the scores as you go!

Welcome to my new series, Easy Plant-Based Meals, where I share simple, nutritious meals that I make for my family on the regular. 🥦🥕🥬🧅🧄🫘🫑
 
Today I’m making Garlic Pearled Couscous with Roasted Chickpeas & Veggies. 

Here are the ingredients you need to serve 4: 

1️⃣ 2-3 boxes of Near East Pearled Couscous with Roasted Garlic & Olive Oil (I find that 3 boxes yield about 4.5 cups; you can also use a plain pearled couscous)
2️⃣ 1 can garbanzo beans 
3️⃣ 4 TSP avocado oil 
4️⃣ 1 zucchini 
5️⃣ 1 bell pepper
6️⃣ 2T-1/4 cup pine nuts, optional but I like the added heart-healthy crunch
7️⃣ Salt, pepper & paprika to taste 

Directions:
1️⃣ Preheat oven to 375. Drain & rinse chickpeas, then add to a baking dish. Add 2 TSP of avocado oil, and a nice sprinkle of salt, pepper, and paprika to taste. Mix it up, then cook for 25 minutes, stirring halfway through. 

2️⃣ Cook the couscous according to the box directions. 

3️⃣ Heat 2 tsp avocado oil in a sauté pan over medium-low heat. Chop the zucchini and bell pepper, add a sprinkle of salt & pepper, then cook until tender. 

4️⃣ Lightly toast the pine nuts. 

5️⃣ Plate the couscous, add the roasted chickpeas & veggies on top, & sprinkles pine nuts onto each plate. Enjoy!

🌎 The largest National Park in the contiguous U.S. - 3.4 million acres! - did not disappoint 🔥 Here’s what we had on our agenda for Day 2️⃣ of exploring Death Valley National Park: 

📍Explore the Mesquite Flat Sand Dunes
🛷Go sledding down the dunes! 
🥾Hike Mosaic Canyon Trail ~ a 3.5-mile out & back trail with 974 ft elevation gain. This trail was so much fun & the rock formations are gorgeous! My daughter loved climbing & bouldering around. It features some cool slot canyons and difficult rock scrambling - our kinda speed! 
🚰 Refuel at Stovepipe Wells Village ~ Nearby pitstop within the park for gas, restrooms, a general store & restaurants
