Weekend Shenanigans: Harley Wants a Dog Stroller

Hi there!

Hope that you all had a fabulous weekend. My weekend was great! Let’s delve into a recap of it:

Calavera Hills-1

I kicked off my weekend with a hike with Harley at a nearby spot called Lake Calavera Hills Preserve. It’s a pretty area, and one pretty unique aspect of it is the 22 million-year-old volcanic plug that’s located there:

The first time I went hiking here, we saw a rattlesnake. This time, towards the beginning of my hike, a man warned me that he had seen a couple of snakes there that day. Since Harley loves to stick her face in bushes and zigzag around exploring, I felt somewhat paranoid of her getting bit by one. Luckily we were all good, but eeeeek!

At the summit of the mountain, you look down into a field and a nearby high school. Check out this romantic gesture:

Maybe the bar was set low for me from the boys I dated as a teenager, but spelling out, “PROM…?” into a yellow field is pretty clever for a 17-year old, don’t you agree?

At the top of the mountain, Harley laid down in the shade with this ridiculously funny face on and wouldn’t move for a couple of minutes:

I’ve been here a couple times since moving to the area. It’s a pretty spot but, contrary to Harley’s dramatics, it isn’t all that challenging of a hike. I’m going to be looking for some new hiking spots coming up.

After cleaning, hanging decor up, unpacking and organizing in my house on Saturday  (Does it take anyone else what feels like forever to get settled when they move?), my hubby and I popped over to the beach for a quick hour of surfing (him) and reading (me).

Saturday night we had another couple over for dinner. Leanne was my first friend as a Marine spouse (actually, at the time neither of us were wives yet), and her husband became good friends with my hubby when they were in military training together. Now for the first time ever, we’re all living in the same area! It’s going to be fun living so close to one another.

I made guacamole for us to nosh on at the beginning of the night (aka my go-to for a super easy, tasty appetizer)…

…and for dinner I made two whole wheat pizza pies:

The top pie had mozzarella, ricotta, asparagus, and cherry tomatoes, while the bottom was a classic margherita pizza. Both came out really good! Throughout the night, I had a few glasses of my favorite summertime wine varietal: riesling.

By the way, Fetzer is a brand that makes a crisp, refreshing, low-priced riesling that I buy all the time.

On Sunday, my hubby and I took advantage of the beautiful day and took the pup for a long walk along the coast.

I’m not sure what her deal was over the weekend, but again Harley was acting like she was so exhausted and laying down while we were walking. It wasn’t even that warm, and she’s only 3 1/2 years old with lots of energy. We joked around that she must have been hungover from having our friends over late the night before. I’m predicting that she is going to be one lazy pup when she gets older!

Towards the end, she laid down in the shadow of a car, and I tried to pick her up and jokingly carry her. Normally she wants nothing to do with being held, but my 50-pound dog tilted her head back and laid there like a happy baby as I carried her… for about 20 steps before I handed her off to Adam. I had tears streaming down my face from laughing at what she looked like. If there’s one thing Harley has, it’s character. She is such a nut!

I’ve never seen this anywhere else, but people in California have strollers for their dogs, which I think is completely hilarious and ridiculous. We were joking that apparently Harley needs a baby stroller now!

Besides the pizza and guac, other notable eats of my weekend included this black bean burger topped with avocado, bell pepper, red onion & shredded Mexican cheese with sautéed zucchini on the side… Black bean burger

…an English muffin topped with peanut butter, banana, cinnamon, honey & chopped up cinnamon Quest bar pieces…

…and trying out Siggi’s strawberry & basil Greek yogurt: Siggis

I’m a big fan of Siggi’s. Their yogurts are low in sugar but are still sweet enough for me to like them. In a grocery store filled with products containing complete junk for your body, how can I not love a product like this?

There was also kettle corn in my life when my hubby and I went on a movie date to see Chef.

The flick was about this chef who followed his passion for food, cooking, and creating dishes that he loved. There was a lot of meat in the movie (which I obviously am not crazy about), but I loved the underlying message of the movie, and I came home feeling hungry from watching 2 hours of nonstop food on the screen, wanting to either make a second dinner or dessert. We wound up eating dark chocolate chip banana bread at midnight…

…and had it toasted for breakfast the following morning with glasses of apple/carrot/spinach/orange juice:

I was just thinking about how I always bring my own snacks to the movies. It’s definitely something my mom instilled in me as a kid. She always brings whole bags of popcorn in a big purse! I can remember having a girlfriend in high school who cared way too much what people thought about her, and she was embarrassed when I brought my own snacks to the movies with her once. I mean hey, it’s cheaper and healthier, so why not right?

Questions: Do you bring your own movie snacks? If you have a dog, is he/she as dramatic as mine?

    Strawberry and basil sounds like an awesome yogurt flavor! I need to try that. And riesling is the best summer wine, though my husband doesn’t like sweet wines so we usually compromise with a sauvignon blanc. It’s also a favorite.

    I had a friend whose dog would just plain give up mid-walk. Just sit down and not budge. Of course, hers was an 8-lb pomeranian, so those are a bit more manageable to carry home. I hope Harley is back to his spunky self after a good rest!

      You should try it, it was a yummy flavor!

      Sauvignon blanc tends to be too floral for me, but you know what I’ve been into lately as well? Chardonnay. It has got to be buttery with some nice oak flavor going on though.

    Harley is so cute! How funny!!

    I sometimes bring my own snacks to the movies. I haven’t been in so long because I prefer to watch movies at home on demand!

      Agreed, we watch a lot of movies at home too! Have you been to the plush movie theaters they have now? I went to one recently with reclining comfy chairs and it was amazing. I want to check out one that serves you drinks too!

      They probably would! Harley’s good with little dogs. She’s always submissive so even with a dog Rodney’s size, she’ll roll over to play haha

La Jolla is an ever popular area, but for good reason… It’s one of the most beautiful areas in San Diego ☀️ & my favorite time of year to visit is NOW when it’s Harbor Seals Pupping Season! 🦭

📍Casa Beach is closed off from humans from mid-December through mid-May for birthing & bonding, and most of the seal pups are born in February & March. They are so much fun to watch!

Last weekend we got to ride on the world’s largest rotating aerial tram car, the Palm Springs Aerial Tramway 🌴⛰️ Guests travel 6,000 feet up in just 10 minutes! 

Once we reached the top, we hiked a couple miles of trails in Mount San Jacinto State Park - where it was only 37 degrees and windy, brr! - and took in the beautiful views. 

Here are a few tips for optimizing a Palm Springs Aerial Tramway adventure: 

✨Show up early. We didn’t realize how big of a production this excursion would be, and when we arrived at 11 am, the wait time was 2 hours to ride the tramway. If I could do it over, I would show up at opening time. 

✨Bring breakfast. While they do have food options while you wait for your tram ride, it’s stereotypical not very healthy American food. Pick up food at a local cafe and bring it with you to enjoy outside. We love @palmgreenscafe!

✨ Bring extra clothes. The temperature at 8,500 ft elevation varies from 20-40 degrees colder, so make sure to pack a jacket, sweatshirt, hat, even gloves.

Who else is pumped for the Olympics to start?! 🇺🇸

This curling competition experiment is a hit with my kiddo! Here’s how to make it: 

You’ll need: 
✨A rimmed baking sheet
✨Aluminum foil 
✨Permanent markers (we used black + red) 
✨A variety of pebbles 
✨Optional: buttons, craft pom-poms and other objects to experiment playing with 

1️⃣ Spread foil across your baking sheet. Draw the starting line on 1 side and a small circle inside a large circle on the other side. 

2️⃣ Place your “rink” in the freezer, then fill it with water halfway up the sides. Chill until it’s totally frozen. 

3️⃣ Time to play! Each player picks 3 pebbles. Take turns using a finger to push your pebble towards the target. 

🥌 Pebbles that land in the inner circle = 3 points each 
🥌 Pebbles that land in the outer circle = 1 point each
🥌 3 rounds = 1 game 

❗️Players can hit other pebbles & knock them out of the circles, which is fun! 

❗️Once all players use their pebbles, that’s the end of round 1. Tally the scores as you go!

Welcome to my new series, Easy Plant-Based Meals, where I share simple, nutritious meals that I make for my family on the regular. 🥦🥕🥬🧅🧄🫘🫑
 
Today I’m making Garlic Pearled Couscous with Roasted Chickpeas & Veggies. 

Here are the ingredients you need to serve 4: 

1️⃣ 2-3 boxes of Near East Pearled Couscous with Roasted Garlic & Olive Oil (I find that 3 boxes yield about 4.5 cups; you can also use a plain pearled couscous)
2️⃣ 1 can garbanzo beans 
3️⃣ 4 TSP avocado oil 
4️⃣ 1 zucchini 
5️⃣ 1 bell pepper
6️⃣ 2T-1/4 cup pine nuts, optional but I like the added heart-healthy crunch
7️⃣ Salt, pepper & paprika to taste 

Directions:
1️⃣ Preheat oven to 375. Drain & rinse chickpeas, then add to a baking dish. Add 2 TSP of avocado oil, and a nice sprinkle of salt, pepper, and paprika to taste. Mix it up, then cook for 25 minutes, stirring halfway through. 

2️⃣ Cook the couscous according to the box directions. 

3️⃣ Heat 2 tsp avocado oil in a sauté pan over medium-low heat. Chop the zucchini and bell pepper, add a sprinkle of salt & pepper, then cook until tender. 

4️⃣ Lightly toast the pine nuts. 

5️⃣ Plate the couscous, add the roasted chickpeas & veggies on top, & sprinkles pine nuts onto each plate. Enjoy!

🌎 The largest National Park in the contiguous U.S. - 3.4 million acres! - did not disappoint 🔥 Here’s what we had on our agenda for Day 2️⃣ of exploring Death Valley National Park: 

📍Explore the Mesquite Flat Sand Dunes
🛷Go sledding down the dunes! 
🥾Hike Mosaic Canyon Trail ~ a 3.5-mile out & back trail with 974 ft elevation gain. This trail was so much fun & the rock formations are gorgeous! My daughter loved climbing & bouldering around. It features some cool slot canyons and difficult rock scrambling - our kinda speed! 
🚰 Refuel at Stovepipe Wells Village ~ Nearby pitstop within the park for gas, restrooms, a general store & restaurants
