It's official, my favorite summertime food obsessions are back in full swing for the season. Over the weekend, I made a strawberry watermelon smoothie not once, but twice. The first time, I made one to quench my thirst while lounging around in my pool for the first time since we moved in a month ago. It was awesome! The second time, my hubby and I had just gotten back from a hike, and a watermelon smoothie sounded like the perfect way to rehydrate. I predict that this smoothie will be back many, many times the next couple of months. Also on the topic of fruit obsessions, I just love pineapple and snacked on it all weekend as well... Pomegranate Superfood Smoothie
Recently I blogged about eating my first pomegranate. Right now the fruit is in season and I've been seeing them everywhere, so I nabbed a few more to play around with in different ways - this time, in a smoothie: Between the pomegranate, chia seeds, and yogurt, this smoothie really packs a nutritional punch. I've spent many hours trying to figure out all of this tech stuff and am so excited to finally have begun my transition to a new site. Peach Protein Smoothie + Mixed Up Meals Monday
Whew, what a busy day! It always seems like I have a lot to get done at the beginning of the week. I was pretty productive but feel like I can never get everything checked off my to-do list. Such is life I suppose. We do all we can, right? So ever since cooking with tofu the other day, I've had making an tofu "omelette" in the back of my head. I've always been intrigued by omelets - not because I actually want to eat eggs (if that were the case, I just would eat em), but because it seems fun to throw a bunch of things into it to whip up a healthy breakfast. Welcome to my first post ever! Let me first start off by giving you a look at a few gorgeous pictures I took last weekend while I was in La Jolla - San Diego, I'm in love with you. To spare you my bragging about how lucky I am to get to live here, I'll get right down to my good eats of today: I started my day off with a smoothie. I LOVE making smoothies because it's a good way to throw fruits and veggies into my diet, and it's also a nice protein source because I typically add some protein powder in. I don't buy the hype out there about consuming massive amounts of protein in your diet.
