Next up: a recap of my very summery weekend! We’re 4 days into summer, and I hope that your season is off to a great start. I’m a few days late in doing a recap of my last weekend, but it was such a fun weekend full of summery activities and the weather was gorgeous, so I can’t help myself from sharing the highlights.

{HIKING} On Friday evening I took my pup for a hike at Elfin Forest, and all of a sudden, it felt like summer had began. It was a sunny, 75 degree day at my house, but 30 minutes away at Elfin, it was in the low 90s and hot. This is the start of me having to check how hot it is inland before going for hikes, because Harley does not do that well hiking in the heat.

At the beginning she kept laying down, and I thought there was no way we were making it very far, but after a bit she seemed to get some energy and we wound up hiking for 2 hours – though at least 20 minutes of that was her resting and panting with her tongue down to the ground. Whew, I burn some serious calories hiking in the heat!

{MOUNTAIN BIKING} I also had another very summery outdoor workout last weekend: mountain biking with my hubby on Sunday evening.

I haven’t been mountain biking in months, and it was really tough! Flying down a mountain after you’ve worked as hard as you can getting up, with your heart rate pumping and sweat dripping off of your face, feels amazing. I think this summer we may make mountain biking a more regular thing!

{DOG BEACH} On the first day of summer, we thought it seemed like a good idea to make a trip to the Del Mar dog beach for a long walk… though the dog rules have just changed over, and we forgot how strict they are there during the summer. Harley had to be on her leash the whole time, which isn’t very fun since she just wants to run around like a maniac. Unfortunately, in the summer we kind of are forced to nix our dog beach visits because of this, so it was probably Harley’s final playtime at the beach for awhile. It’s a bummer because she’s so happy there!

There are other dog beaches further south into San Diego that allow year round unleashed dogs, so we may have to pay some visits to them.

{YOGA} I also got a Saturday morning yoga session in at home, which felt awesome. It’s safe to say that I had a pretty great weekend of workouts!

{RELAXING BEACH DAYS} On Saturday, we got the beach day that we’d been hoping for – clear blue skies, with temperatures in the mid 70s. The overcast weather we’ve been getting a lot of was nowhere in sight, and we spent a few wonderful hours relaxing at the beach and soaking up the sun.

Another way you know that summer has arrived in California is when all of the sudden the UV index feels like it’s way up there. I load on the SPF because I hate getting burnt and my skin is so sensitive. My hubby, who doesn’t burn easily, applied 15 SPF on his chest and got really red. Yikes!

{GRILLING} On the food front, we did a lot of grilling and eating in my backyard last weekend. I mentioned in my last post that I love grilling, and we grilled asparagus + a sriracha quinoa burger for me and salmon for him on Saturday…

…and then we grilled a margherita pizza on Sunday:

Sometimes it’s best just to keep it simple ya know? This classic margherita pie was made with whole wheat dough brushed with garlic infused olive oil, basil from my plant, organic mozzarella and heirloom tomatoes, and it was delicious!

{WINE} We also enjoyed a bottle of crispy, cold chardonnay while we were grilling on Saturday. I love drinking wine in my backyard when the weather’s great!

{APPETIZER DINNERS FILLED WITH IN-SEASON PRODUCE} On Friday I made it an appetizer-for-dinner night, and I whipped up some bruschetta with local heirloom tomatoes, olive oil, balsamic glaze, sweet onion and mixed up salt:

Guacamole was also included in this dinner, obviously.

Other favorite summery things that I did not do this weekend include:

  • Visiting/drinking at wineries. Who am I kidding? That’s a year round favorite!
  • Boat riding. This only happens when I’m in my home state with my family, as I don’t own my own boat or have friends with them here! One day…
  • Picnicking. …though we squeezed in an evening picnic during the week at the beach last week. Always a nice time!
  • Self-serve fro yo cups. ..although my hubby and I did split a pint of chocolate Halo Top Creamery one night. FYI, it’s my new favorite healthy dessert and I’m pretty damn obsessed, so I’m sure I’ll be talking about them more sometime soon!

    Um, what is this sriracha quinoa burger you speak of? Was that a BUBBA burger flavor? Sounds amazing!

    I don’t have a mountain bike but I’d love to get one. There are so many great trails that are a little too long for hiking.

    I’m sure Harley loves every second of hiking with you, even when she’s laying down panting. It’s amazing how fast they get overheated. Coco’s 13 this year and she’s slowing down big time. I can only take her on 1/4 mile walks now!

    Where did you go mountain biking? I really want to find some spots here and get back into it! And I can do that while it’s too hard to run.

    Everything looks so delicious. I love grilling out in the summer. And patio drinking. And beaches. This place is like heaven.

    Side note: do you know Carly from Snack Therapy? She just moved here for grad school! We need to have a group hike or something. Maybe I’ll kidnap her and take her up your way and we can all try Wrench & Rodent!

    My favorite summer past time is outdoor patio dining…no question! I love being able to sit outside without a jacket. And I’ve never heard of proyo, but this looks fantastic. Thanks for introducing us to a cool new product!

La Jolla is an ever popular area, but for good reason… It’s one of the most beautiful areas in San Diego ☀️ & my favorite time of year to visit is NOW when it’s Harbor Seals Pupping Season! 🦭

📍Casa Beach is closed off from humans from mid-December through mid-May for birthing & bonding, and most of the seal pups are born in February & March. They are so much fun to watch!

Last weekend we got to ride on the world’s largest rotating aerial tram car, the Palm Springs Aerial Tramway 🌴⛰️ Guests travel 6,000 feet up in just 10 minutes! 

Once we reached the top, we hiked a couple miles of trails in Mount San Jacinto State Park - where it was only 37 degrees and windy, brr! - and took in the beautiful views. 

Here are a few tips for optimizing a Palm Springs Aerial Tramway adventure: 

✨Show up early. We didn’t realize how big of a production this excursion would be, and when we arrived at 11 am, the wait time was 2 hours to ride the tramway. If I could do it over, I would show up at opening time. 

✨Bring breakfast. While they do have food options while you wait for your tram ride, it’s stereotypical not very healthy American food. Pick up food at a local cafe and bring it with you to enjoy outside. We love @palmgreenscafe!

✨ Bring extra clothes. The temperature at 8,500 ft elevation varies from 20-40 degrees colder, so make sure to pack a jacket, sweatshirt, hat, even gloves.

Who else is pumped for the Olympics to start?! 🇺🇸

This curling competition experiment is a hit with my kiddo! Here’s how to make it: 

You’ll need: 
✨A rimmed baking sheet
✨Aluminum foil 
✨Permanent markers (we used black + red) 
✨A variety of pebbles 
✨Optional: buttons, craft pom-poms and other objects to experiment playing with 

1️⃣ Spread foil across your baking sheet. Draw the starting line on 1 side and a small circle inside a large circle on the other side.

3️⃣ Time to play! Each player picks 3 pebbles. Take turns using a finger to push your pebble towards the target. 

🥌 Pebbles that land in the inner circle = 3 points each 
🥌 Pebbles that land in the outer circle = 1 point each
🥌 3 rounds = 1 game 

❗️Players can hit other pebbles & knock them out of the circles, which is fun! 

❗️Once all players use their pebbles, that’s the end of round 1. Tally the scores as you go!

Who else is pumped for the Olympics to start?! 🇺🇸 This curling competition experiment is a hit with my kiddo! Here’s how to make it: You’ll need: ✨A rimmed baking sheet ✨Aluminum foil ✨Permanent markers (we used black + red) ✨A variety of pebbles ✨Optional: buttons, craft pom-poms and other objects to experiment playing with 1️⃣ Spread foil across your baking sheet. Welcome to my new series, Easy Plant-Based Meals, where I share simple, nutritious meals that I make for my family on the regular. 🥦🥕🥬🧅🧄🫘🫑
 
Today I’m making Garlic Pearled Couscous with Roasted Chickpeas & Veggies. 

Here are the ingredients you need to serve 4: 

1️⃣ 2-3 boxes of Near East Pearled Couscous with Roasted Garlic & Olive Oil (I find that 3 boxes yield about 4.5 cups; you can also use a plain pearled couscous)
2️⃣ 1 can garbanzo beans 
3️⃣ 4 TSP avocado oil 
4️⃣ 1 zucchini 
5️⃣ 1 bell pepper
6️⃣ 2T-1/4 cup pine nuts, optional but I like the added heart-healthy crunch
7️⃣ Salt, pepper & paprika to taste 

Directions:
1️⃣ Preheat oven to 375. Drain & rinse chickpeas, then add to a baking dish. Add 2 TSP of avocado oil, and a nice sprinkle of salt, pepper, and paprika to taste. Mix it up, then cook for 25 minutes, stirring halfway through. 

2️⃣ Cook the couscous according to the box directions. 

3️⃣ Heat 2 tsp avocado oil in a sauté pan over medium-low heat. Chop the zucchini and bell pepper, add a sprinkle of salt & pepper, then cook until tender. 

4️⃣ Lightly toast the pine nuts. 

5️⃣ Plate the couscous, add the roasted chickpeas & veggies on top, & sprinkles pine nuts onto each plate. Enjoy!

🌎 The largest National Park in the contiguous U.S. - 3.4 million acres! - did not disappoint 🔥 Here’s what we had on our agenda for Day 2️⃣ of exploring Death Valley National Park: 

📍Explore the Mesquite Flat Sand Dunes
🛷Go sledding down the dunes! 
🥾Hike Mosaic Canyon Trail ~ a 3.5-mile out & back trail with 974 ft elevation gain. This trail was so much fun & the rock formations are gorgeous! My daughter loved climbing & bouldering around. It features some cool slot canyons and difficult rock scrambling - our kinda speed! 
🚰 Refuel at Stovepipe Wells Village ~ Nearby pitstop within the park for gas, restrooms, a general store & restaurants
