A few weeks ago, I stopped at the Vitamin Shoppe to pick up a few goodies (and buy my first box of Quest bars!), and they had a store party going on. I walked out with a bag of samples to try, which I was obviously excited about. It's the little things in life people! One of the samples in the bag were hemp seeds, which I've heard a lot about but have never tried (at home at least). Today I used my sample and whipped up one awesome salad for lunch. I adapted this recipe from Vegetarian Times, switching around some ingredients and amounts, and making a single serving portion since it was just little ole me. You can view their original recipe here. To make the clusters, I toasted the hemp seeds with walnut pieces, honey and cinnamon. So easy to make, and such a tasty addition to a ... [Read More]

7-Ingredient Cleanse: Days 2 & 3
It's Thursday night and I have nearly made it through my 3-day detox - barring that I don't cave in and shove ice cream into my mouth in these last few hours of it! Yesterday was the roughest day of the cleanse for me. I was feeling pretty icky from having a cold, and a lot of the time when my head is congested, I'm not in the mood for most foods - let alone plain cleansing foods like broccoli and beets. I alternated between feeling like I was doing fine with the detox, then wondering what the hell I was doing and wanting to crawl up in the fetal position with a bag of dark chocolate chips. ;-) Day 2 - Breakfast Lunch Snack Dinner Dinner was the low point of the day for me, and this picture gives you a glimpse as to why: My hubby ate delicious leftover homemade pizza and ... The Vegetarian Times 7-Ingredient Cleanse
Hello, hello! Here's a little tidbit about me: I love to read hard copies of things, and I get tons of magazines delivered to my house. I know that I can read things online, but there's just something nice to me about having a real magazine (or book) in hand and getting away from technology. My favorite places to read are at the gym while I'm cycling or doing the stair master (because it makes the time go by fast!) or while I'm relaxing at the beach. One of the magazines I love checking out is Vegetarian Times. I'm always tearing out pages from the magazine of things to note or recipes to try. Last week as I was reading their June issue, I came across an article called "The 7-Ingredient Cleanse" and was intrigued. (via) With summer's stellar lineup of naturally detoxifying fruits and ... Mushroom & Caramelized Onion Shepherd’s Pie
Happy Hump Day! First thing's first - the winner of the bread crumb giveaway is Angi, whose idea was to sprinkle Panache Pantry's zucchini rosemary bread crumbs onto lightly fried garlic polenta squares. I've been in touch with her, and Angi is going to try the zucchini rosemary & pumpkin cajun varieties. Yum! Now onto last night's dinner... I spotted this recipe on the Vegetarian Times website and thought that it looked interesting. My idea was to make it during the weekend when I had more time, since the recipe does take longer to put together than my usual busy weekday dinners. But when I got home from being out and about on Sunday evening already feeling pretty hungry, I quickly threw out this idea and made something quick instead. Yesterday I multitasked while making this recipe ... [Read More]
Roasted Fennel with Parmesan Vinaigrette
A couple of weeks ago, I found an intriguing recipe on the Vegetarian Times website for roasted fennel. I began experimenting with fennel somewhat recently, and have been a bit surprised to find myself liking its licorice-like flavor. With this recipe in mind, I picked up some fennel bulbs with the intention of roasting them for the first time... and then totally forgot about them in the back of one of my produce drawers. Today I was digging around my fridge and found them, slightly browned but luckily still useable... And I turned them into this... To make the dish, I first sliced the fennel bulbs into wedges... Next I mixed olive oil, minced garlic, mustard, thyme, salt, and pepper in a small bowl, then added grated parmesan cheese to the mix. I tossed the fennel with the dressing, ... [Read More]
Mediterranean Veggie Burgers & Sweet Potato Fries
Hope your week is off to a good start! While I cranked through work, a workout, and getting Harley some exercise earlier in my day, my late afternoon was spent at one of the most dreaded places ever - the dentist. Not only do I despise getting my mouth poked and prodded at (does anyone actually enjoy it?!), I always seem to have a rough time after getting any dental work done. Tonight I'm left with a colossal headache, but have regained feeling in my face so YAY for that! You're probably thinking... Would you like some cheese with that whine? ...and so I'll quit my complaining and tell myself that I'm lucky to be able to go to the dentist and have healthy teeth. Going to the doctor and dentist is certainly a facet of healthy living, although sometimes not a fun one. I'll move on ... [Read More]
