Happy Monday! Let's talk soup, shall we? We're in the last few days of October, and this month I've become a soup making queen. Every fall and winter I usually get obsessed with homemade soup for dinner, but I have a feeling this is going to be even more true this year since I'm now living in the chilly northeast. When the temperatures are in the 50s and below, I crave soup every other day. Nothing says cold weather comfort food to me like a big warm bowl of healthy soup with a hunk of bread on the side! And so, today I'm sharing my first soup recipe of the season. I'm taking a classic soup recipe, potato leek, and putting my own twist on it. Typically potato leek soup contains cream and/or butter, but my recipe leaves out the dairy - yet it's still creamy and delicious, I promise! I ... [Read More]

Easy Tomato, Pasta & Zucchini Soup {vegan}
I find March to be a sort of in between strange time of the year. We've sprung ahead an hour and the official spring season starts in a couple days, but in most places in America, it's still wintery. I know that you northeasterners just had a snow storm, and it's looking like there's a good chance for more snow this week. Meanwhile in the San Diego area, last weekend we had a rainy Saturday - and not even just a drizzle here and there. It was a full-blown rainy day like the rest of the country often gets. We've also had some daytime temperatures in the 50s lately, which is pretty much as cold as it gets here (no complaints here). So, even though it's about to be springtime, I find myself craving soup throughout March and sometimes well into the season. I love having soup for dinner, and ... [Read More]

Lately the weather in the San Diego area has been nuts. Rain, rain, and more rain for the past month! This is usually the "rainy" season - though I use that term loosely - but this has been more rain than I've seen in my 7+ years in California. For the state, this is good news! California's reservoirs are swelling for the first time in half a decade, and the drought we've been in for years might be over if Mother Nature keeps it up. With all of the rain lately, a few things have been happening in my world. For one, my dog has been super whiny and energetic. She literally does sprints around the house when it's raining out, and cries at the door yet doesn't want to go outside and get wet... not that I blame her, I've been missing our outdoor workouts too. Secondly, my ... [Read More]
Easy Orzo Vegetable Soup {vegan}
Soup, oh how I love you so. All throughout autumn and winter, I'm a soup eating machine. Some nights I know exactly what I'm making; other nights I just throw a bunch of stuff in a pot and see how it turns out. It usually turns out well, and that my friends, is the beauty of soup. It's warm, comforting, filling, and can be super easy to make. Today's soup recipe was deemed winner with a capital W by my hubby, who claimed that I "outdid myself" with this recipe - proving that sometimes simple is best. And the best part? From start to finish, it's ready in 30 minutes flat. While I'm enjoying time with my loved ones on the East coast for the holidays, I thought it'd be a perfect, cozy recipe to share with you guys. In fact, my parents hosted Christmas Eve this year, and I made this ... [Read More]
