Hi friends! How was your weekend? Highlights of mine were a date night to celebrate my hubby's admission into his MBA program of choice for the fall (exciting stuff!), a trip to the dog beach with my pup, and recouping from last week's Vegas work trip. Resting up felt so nice after this busy time of work for me. I got a massage, hung out with my hubby, got a lot of sleep, did some yoga and drank a few glasses of wine. Avocado Walnut Pesto Tofu Salad
When I was younger, I didn't eat nuts -- no cashews, almonds, walnuts, pine nuts, nada. I can't decide which came first: me deciding that my tastebuds weren't a fan, or me putting them on my silly can't-eat-because-of-the-high-fat-content-list. Well my friends, I've gotten older and wiser, and now am a firm believer in including heart-healthy fats in my diet on a daily basis. Nuts (and most definitely nut butters!) are a frequent part of my eats. I'll throw a half-serving on top of my yogurt, or eat a serving as a snack here and there. Tofu Breakfast Tacos
Another weekend has flown by, and Monday came oh so quickly. As I've mentioned before, I telecommute for my job, and working from home has its perks: Sometimes I work in my pajamas. As a matter of fact, if I have a conference call at 8 am or earlier, it's an almost guarantee that I will not be dressed yet. I also get to work with my dog sleeping at my feet under my desk the majority of the time, which is pretty sweet. I'm lucky enough to have a pretty flexible schedule. If I need a breather or am having writer's block, I can go for a walk with my pup or take a workout break. And since my kitchen is just down the stairs from my office, I make pretty much all of my meals. I love being able to make my own food and taking a few moments to play around with recipes. Drunken Noodle Soup
Happy Friday everyone! I don't know about you all, but I'm super excited for the weekend. Got some fun things planned! In blog news, I updated the recipe page today. Go check it out! You may also notice that some new fonts and colors are making an appearance on my site. I'm fooling around with things to try to find a new look that I like. It might just take me 27 hours to figure out, but I'm learning and experimenting with it! Yesterday morning I had the second part of my root canal done. I'm not going to lie, I hated every minute of it, but I'm glad that it's over with. I noticed after the first part was done a few weeks ago that I'm now able to eat on the left side of my mouth without shooting pain, so it seems to be successful. WOO! Veggie Scramble Burrito
Hi there! Yesterday I snapped photos of every single thing I ate, but wound up feeling too exhausted last night to form coherent sentences in a blog post after my usual Wednesday activities - work, working out (pilates + a Jillian Michaels' DVD that kicked my butt!), a long walk at the park with Harley, and volunteering at the Humane Society. So, my What-I-Ate-Wednesday post is coming at ya a day late! ;-) My breakfast was one of my usual yogurt & fruit combos. Experimenting with Tofu
I've been a vegetarian for 15 years. Because of this, you may think that perhaps I'm an expert in typical vegetarian staples, such as tofu. This is definitely not the case, and up until recently, I had never cooked with tofu before. I've gotten a bit familiar with it lately and have been playing around and making things like tofu scramble wraps. Today, I wanted to try to make crispy tofu and put together grilled veggie and tofu skewers. First, I heated up my little indoor gril to 350. I then cut up a red bell pepper, medium zucchini, and 6 oz of extra firm tofu into thick chunks. Next I divided the pieces among 6 skewers: In a bowl, I mixed together 1/4 c of BBQ sauce and 1/4 TSP of steak seasoning.
