This easy summertime pie is bursting with fresh strawberries and features an oat crumble topping! Recently my little family went to a local farm to pick strawberries, and we came home with a huge amount of berries to enjoy. When I go fruit picking, I always look at it as a challenge to use up the produce in as many ways as I can - and to not let any fruit go to waste. Today's strawberry pie recipe is the product of my recipe testing with my CT-grown berries. I've always loved being a locavore, and hope to instill a love of eating locally and being connected to the food we eat in my daughter. Camryn had been iffy on eating fresh strawberries on their own, but when I put our haul of strawberries in front of her to snap a photo, she started going to town on them. It was worth letting her ... [Read More]

Healthy Strawberry Oat Banana Bread {vegan + gluten free}
This seriously moist & delicious banana bread features fresh strawberries & an oat flour! After I went strawberry picking a couple weeks ago, I had all of these strawberry recipe ideas swirling around in my head. And so, today we're talking about strawberry recipe #2 of this season! {Recipe #1 was these dairy free baked strawberry donuts with strawberry cream cheese frosting.} Since we had picked a big bucket of berries, I thought that they'd be around for awhile, and that I'd get to test out at least a couple of recipes. But that was not the case! Less than a week after my husband and I went strawberry picking, we had eaten the entire bucket. What can I say, we both are big strawberry fans (I mean who doesn't like strawberries?!). Luckily, I did have the ... [Read More]
Baked Strawberry Donuts with Strawberry Cream Cheese Frosting {vegan}
Healthier than your typical fried donuts, these vegan baked donuts use fresh strawberries, oats & cashew butter in the batter, & are topped with a strawberry cream cheese frosting! I haven't shared a sweet tooth recipe with you in a solid six weeks. The madness! Truth be told, I've been doing a lot of experimenting in the kitchen with new snack & dessert recipes, but many of them have been freelance projects. But today I'm back with a very delicious donut recipe... my very first donut recipe on the blog! Over the holidays, my hubby's grandmom & mom gave us a gift card to Stonewall Kitchen, and I went ahead & purchased something I'd been meaning to nab for awhile... a donut pan! I've been playing around with my first batches of homemade donuts, & ... [Read More]
Blueberry Granola, Berry & Coconut Yogurt Parfaits {vegan + gf}
Happy Friday! What do all of my fellow American readers have planned for the 4th of July weekend? It kind of feels strange for it to fall on a Tuesday this year, and I don't have anything too exciting planned. Besides working on some freelance recipe development & blog stuff, I'm hoping to spend some time outdoors to enjoy the weather - I'm thinking perhaps some time at the beach, a bike ride with the hubby, and soaking up the sun in my backyard poolside. Oh, and my hubby will undoubtedly force me to watch episodes of the HBO John Adams series. It happens every year & he's been putting it on TV late-night all week (much to my dismay!). Naturally, I'm sure that my holiday weekend will include some good eats. Today's recipe is an ode to America: red, white & blue yogurt parfait ... [Read More]
Strawberry, Cashew & Apricot Salad with Strawberry Basil Vinaigrette
Hi friends! Hope you that you had a great weekend. Mine was pretty low-key: did some schoolwork (got 100% on my second test!) and stuff around/for the house, went hiking, got some beach time in and just enjoyed the summertime weather. And speaking of summer, today's recipe is most definitely seasonally appropriate. I came up with this salad after having recently eaten a strawberry basil Greek yogurt. I loved the flavor combo, and when I picked up strawberries during my next grocery store run, I started thinking about pairing local strawberries with basil from my backyard for a dish. In general, I like to switch things up in the kitchen, but this just isn't the case when it comes to salad dressings. My go-to dressing mix is extra virgin olive oil + fresh lemon juice + balsamic ... [Read More]
Dark Chocolate Hazelnut Butter Stuffed Strawberries
In honor of Valentine's Day taking place in a few days, I have a delicious dessert recipe to share with you all today. It all started when I heard about Davida's Valentine's Day Bake Off. Naturally, I wanted to participate, but there weren't any baking ideas immediately popping into my head....and then I thought of making a homemade version of Nutella. Since it's V-Day, the idea of strawberries were also on my brain. Technically there isn't any baking involved in this recipe, but I figure that there's no room to be a stickler for rules when chocolate is involved, right? ;-) I think many people would agree with me when I say that Nutella is heavenly tasting. I think it's slightly ridiculous that people see it as a "nutritious" thing to eat for breakfast, but I do not pass up the ... [Read More]
