Avocado, Spinach & Walnut Pesto Pasta
Good old St. Paddy's Day is tomorrow, and while I didn't make any Irish soda bread last weekend or have a blast celebrating at any parades, I wanted to share a green recipe in honor of the holiday. My heritage is part Irish, and I have lots of St. Paddy's Day memories: my family getting together at my grandma's house (who was Italian, but loved any excuse to celebrate!) for corned beef & cabbage (hold the corned beef for me), potatoes and Irish soda bread; and day drinking at many Irish parades in Jersey as a college kid. Quinoa & Spinach Mac -n- Cheese
With my trip to Jersey and Christmas right around the corner, I'm starting to get super excited! My hubby and I are flying out to the East coast on Saturday, so food-wise, I'm at that usual point - when you're about to leave the house for awhile and will need to clean out the fridge, so you eat random combinations of food in order to not waste things. Today I wound up eating quinoa twice. Election Night Fare: Spinach & Red Pepper Quiche
Happy Election Day! Like a lot of people in the U.S. this evening, I've been tuning in to my television watching the projections and stats for the presidential race. I was so distracted with election coverage, I forgot to photograph tonight's dinner until we had eaten half of it.... When I'm preoccupied with other things, like watching a game or in this case, an election, a quiche is a great meal to make. This is because there's little prep time, and once I pop it in the oven, I can just let it bake while paying little attention to it. Happy Friday! I started off my morning with a long walk with Harley. Apparently it's going to be 100 degrees here today and tomorrow. Yikes, that it pretty damn hot for San Diego! I wanted to burn off some of Harley's energy before it got too warm. It was gorgeous out this morning, and it always feels good to start off the day with some movement. Winning! 15 Minute Meal: Spinach Ricotta Pasta
Hi friends! Hope you're having a great week. This evening when I got home from the gym, I was pretty ravenous. Wanting to prep dinner quickly, I threw together this easy, cheesy pasta dish: Spinach Ricotta Pasta Serves 4 8 oz [multigrain] angel hair or spaghetti 6 c of raw baby spinach 1 c cherry tomatoes, chopped 2 garlic cloves, minced 1/2 TBSP olive oil 1 c light ricotta cheese 1 c light shredded mozzarella cheese Salt & pepper Boil a pot of salted water and cook pasta according to directions.
