Hi there! Hope that you had a great weekend. I was more than ready for the weekend on Friday, and I kicked off my 2 days off with a hike at my favorite trail area with my hubby and this maniac... We hiked for a bit under 2 hours, and it felt so nice to be out in nature after a long week! ... [Read More]

No-Bake Summer Veggie & Lemon Ricotta Lasagna
Growing up, I was not a fan of corn on the cob. I didn't despise it, but I just didn't really get what was so special about it. It seemed as though everyone ate it on a daily basis in the summer. Fast forward to now, and all of a sudden I like corn on the cob - and enjoy cutting it off the cob and throwing it into recipes even more. My husband, on the other hand, thinks that corn should only be eaten on the cob. But when it comes to persuading him to like foods, I tend to be pretty persistent. He was once a bean hater, and now I hardly ever hear a complaint when I throw chickpeas in our salads. In fact, he now voluntarily orders lentil soup sometimes. Point of the matter is, I'm not giving up on throwing corn into recipes just yet my friends! So when I came across a recipe in the ... [Read More]
Fennel & Endive Salad with Almonds -n- Cherries
I always eat a bunch of servings of fruits & veggies on a daily basis, but lately I've been really putting in an effort to ramp up my produce intake even more. I just feel that eating whole foods as often as possible is the healthiest way to eat. I'm somewhere in between a vegan who eats a high amount of (good for you) carbs, and someone who thinks that eating lots of protein is key. I've been trying to find balance between eating a ton of fruits and veggies, while also getting what I feel is enough protein in my diet to feed my muscles, especially on days when I have hard workouts. Today I'm sharing my eats from yesterday to show you what that balance looks like to me. Note that every single day isn't as clean eating as this. I indulged on Tuesday night and had tortilla chips with my ... [Read More]
Why I Love Mangoes
Before I talk about anything else today, I must first mention the Boston Marathon bombing. I've had a sick feeling in my gut watching the news and thinking about how such a celebratory event turned so tragic. People put so much time and effort into training for the marathon, and to think that the day was ruined by a terrorist/group of terrorists is utterly disheartening. A few people lost their lives, and many more will be forever scarred by what happened today. I can only imagine the feelings of panic that people felt as the explosions went off, and my thoughts are with everyone who was effected today. I can only hope that in moving forward, those injured will recover well, the loved ones of those lost can find a way to carry on, and that justice will be served to whoever is ... [Read More]
My First Pomegranate
While exploring the Little Italy farmer's market a few weekends ago, my friend Jackie was psyched when we spotted locally grown pomegranates. I had somehow never eaten a pomegranate fruit before, which might be a bit odd since I'm slightly obsessed with fruit. I've had many pomegranate flavored things, just never the real thing. Always excited to nab foods at the market that I haven't eaten before, I picked one out to try. Pomegranates are a fruit with a lot of health benefits. They're full of antioxidants and rich in nutrients, particularly Vitamin C, B5 and Potassium. Research has shown that regularly eating the fruit can increase oxygen levels to the heart, promote healthy circulation of the blood, and help improve digestion. It's even believed that pomegranates are great ... [Read More]
